Smoky Mac 'n Cheese

This was okay, but way too smoky. We only had one serving each, and couldn't get through it. Ended up having to throw the rest away. However, this is definitely a good base recipe; the next time I use it, I'll just cut the smoked cheese in half and supplement with another type of non-smoked cheese.

Easy Vegetable Pot Pie

I made this the other night and it turned out better than expected! I figured that because it was so simple, it would just a typical, boring dish...but it was actually really good. Very tasty - the child even liked it! I'll definitely make this again and again. I did use frozen vegetables instead of canned, and I didn't brush with an egg because I didn't have eggs on hand. I also didn't measure spices (as per usual; I'm very liberal with my spices).

Spicy Vegan Potato Curry

I tried this out for the first time yesterday, and it came out pretty good. I think I boiled my potatoes too long, because the texture of the curry was much like potato leek soup - not bad, but not what I was expecting. Anyway, that was my blunder! I used the ready-minced garlic in a jar, less onion and tomato (due to a boyfriend who doesn't like either), and completely omitted the cayenne pepper (I wasn't looking for a spicy dish, but wanted to try an easy Indian curry at home). The next time I try this, I'm going to use more potatoes as other people suggest (and not boil them as long!) and reduce the amount of coconut milk used. It was very saucy, but perhaps too much. But I agree with whoever said the spice combination was spot on - mmm mmmm! Very tasty.

Tofu Parmigiana

This was FANTASTIC. I did go with one of the reviewer's suggestions: after slicing the tofu, I dipped in flour, egg, then breadcrumbs, and then baked at 350 or 375 for roughly 15 minutes on each side. Even my boyfriend, who is a proud meat eater, said, "This is amazing." So, there you have it.

Chewy No Bake Granola Bars

I made these for the first time last night and really enjoyed them. They are a savior for me as store-bought ones, which are filled with high fructose corn syrup and random other garbage, make me really sick. The best thing is that they're chewy! And since they don't require use of the oven, I can make them all summer without worrying about overheating my apartment. I use whatever I have on hand, so in this batch I didn't use rolled oats, but I added cinnamon just for fun. Also the next time I make it I might use 1/3c brown sugar. 1/2 wasn't a crazy amount, but I'd just like to use a wee bit less.

Blueberry Cream Muffins

Very good. I didn't have fresh blueberries on hand, so I used some mixed berries I had in my freezer. In an attempt for a healthier option, I used apple sauce instead of the oil. Next time I might try to use greek yogurt in place of the sour cream.

Strawberry Cobbler I

Very easy and came out well. I probably used more strawberries than were called for it, but it was because I didn't feel like measuring (and I love strawberries). I also used frozen strawberries because I wasn't sure when I'd be able to make it, and fresh strawberries turn quickly in my region this time of year. I took advice from another review and only used 1/2 cup of water; at first I used the full cup, but it was so watery that I decided to cut down and try again. I found that there was just enough liquid/juice - it was perfect. The family loved it.

Pumpkin Stuffed Shells with Hazelnut Cream Sauce

I made this as my vegetarian contribution to Thanksgiving dinner. It was a tad time consuming to make, but really, really easy and the family (adults and children) loved it. I thought it was very Cumin heavy, so I added a bit more of the other spices to even it out. As it's a pumpkin dish, I also added some cinnamon.

Spinach Alfredo Pizza

Nice and easy. I prefer to use fresh veggies, but with my and my partner's schedules, we have to use a lot of frozen and prepackaged items, so this was perfect for us. I think it could use a bit less alfredo sauce, but I still give it a 5-star rating.

Summer Nights Eggplants

This was really good, but it fell apart easily. I don't know if it was the way I made it, or if it's jsut the way it works with the ingredients. The presentation wasn't ideal for me, but that didn't affect the taste! :)

Very tasty, though I thought it would come out more like a casserole...but that was my mistake. :) I put some of the cheese in halfway through transferring the potatoes to the casserole dish, which was nice.

Sweet Potato Souffle

This is fantastic. I made it slightly off from the recipe, as I used a bit less brown sugar, omitted the coconut (as a friend with whom I was sharing it is allergic), and used 2 eggs instead of 2 1/3. As a side note, the nuts I used were almonds.

Thai Curry Tofu

This was fantastic. The only thing I substituted was the salt. I don't keep salt in the house, so instead I used Mrs. Dash on the tofu. Other than that, I stuck to the recipe and it's one of the best meals I've made in awhile! (And super easy/fast!!)

Fried Rice Restaurant Style

This was pretty good, but I feel like it was missing something. I kept adding soy sauce to it after it was prepared. I had a skillet rather than wok, and it was a little too small so that might have been the reason it didn't come out its best; I'm willing to try it again, of course! I actually made this and threw in some fried tofu. I suggest trying that if you're a tofu fan.

Simple Baked Apples

I've been making this every year around Thanksgiving for the past 6 years, ever since I discovered it here! I made it exactly as written the first time I made it, though now I tend to leave out raisins and nuts due to the variety to whom I serve it. Instead, I throw in frozen cranberries and let them bake with it.
