Vegan Baked Beans

Sweet Potato Pie VII

This is one of the best sweet potato pie recipes I've tried. I usually make a spicy pie, but I just added minimal spices to this pie and it was wonderful: just a slight hint of nutmeg and allspice to enhance the delicious sweet potato flavor, which really shines in this pie! I think I'll make my traditional spicy sweet potato pie and this one for Christmas, to figure out which I really like best, but this pie has already become one of my favorites. I substituted evaporated milk for buttermilk, because I don't keep buttermilk on hand, and I replaced the white sugar with 1/8 Cup of molasses, because I prefer to avoid white sugar whenever possible.

Chocolate Butter-Creme Frosting

This is a rich, delicious, chocolate icing, which is also easy to make. Next time I'll double the recipe so I can cover my cake more generously. I used this recipe with the Four Egg Yellow Cake from this 'site for my husband's birthday cake and he loved it.

Four Egg Yellow Cake

This cake turns out moist, delicious, and not-too-dense. A bit more eggy tasting than other yellow cake recipes I've used, but very good. I used the Chocolate Butter-Creme Frosting from this website with this recipe for my husband's birthday cake; he loved it.

Dill Sauce

This is a tasty, tangy dip. I enjoyed it with the salmon patties I made, but it would be good with a tray of crudites, too. I had to substitute Creole mustard, so I my dip had a bit more zip, but I still enjoyed it. I think that fresh dill is very important for this recipe, because I've made it with dried and the flavor just falls flat; it's easy to keep a patch of dill growing in your garden, on your patio, or even as a houseplant in a sunny window so you can have fresh dill whenever you want it!

Johnson Family Cinnamon Rolls

I love these cinnamon rolls! They aren't the huge, gross, overly-sweet, and overly-sticky cinnamon buns available at the store or a certain cinnamon roll shop found in malls and air ports. These cinnamon rolls are just sweet enough, small enough that one roll is a reasonable portion for one person, and the rolls are delicious iced lightly with a cream cheese frosting. These cinnamon rolls didn't last a day when I made them for my friends and family and I'll definitely make them again. The only change I made was to add extra cinnamon to the cinnamon-sugar mixture and I iced them with a vanilla cream cheese frosting.

Zesty Tilapia with Mushrooms

This recipe was easy, but not thrilling. Tilapia is a rather bland fish and I feel that this recipe didn't add enough flavor, but I would make it again if I was in a pinch and needed a quick fish dish, because it's quick and uses ingredients I usually have on hand.

Crispy Herb Baked Chicken

Easy and delicious! I altered the recipe slightly by adding a half cup of Italian style bread crumbs and instead of butter or magarine I coated the chicken in olive oil before dipping in the breading mixture. This recipe was so easy that I was able to make it on a very busy night and unlike other oven baked chicken recipes I've tried, this one is not messy. My family and I loved this, including my picky toddler, so I will add this to my regular rotation. Thanks for a great recipe!

Thai Pineapple Chicken Curry

This recipe is easy, tasty, and pretty close to my favorite Thai restaurant's mussaman curry, although a little too spicy for my husband's taste. The only change real change I made to the recipe was to reduce the sugar by half and next time I may leave it out entirely, because the pineapple sweetens the dish quite a bit. Next time I make it I'll cut back a bit on the curry paste and pineapple, but add some sweet potato chunks and pecan halves. This was a great week night dinner thanks to the ease of preparation; to make it a little healthier I served it over brown rice. I also recommend using a fresh pineapple cut in to nice-sized chunks, because the fresh pineapple flavor really improves the quality of the dish.

Spinach Lasagna III

This is a fantastic basic lasagna recipe that can be modified to suit any taste; the next time I make it I'm going to try a seafood filling and a white sauce. The first time I made it I didn't have Romano on hand, so I just substituted Parmesan; I doubled the garlic, added a half teaspoon of nutmeg, and used a mixture of Monterey Jack and mozzarella. I also doubled the amount of spinach and used half boiled spinach and half fresh in my spinach-ricotta mixture; I omitted mushrooms since my room mate is allergic. As another reviewer suggested I removed the foil fifteen minutes before removing the lasagna from the oven to allow the top layer to brown, which really adds a lot to the taste and texture of the dish.

Lebanese-Style Tabouli

I didn't enjoy this recipe as written; there was just too much lemon juice, oil, and tomato included and the cinnamon flavor was all wrong. I substituted half of a large cucumber for two of the tomatoes, substituted green onions for a milder onion flavor, only used the juice of one lemon and only 1 Tablespoon of olive oil; I also used ground allspice instead of cinnamon and I added one clove of garlic and in the future may use two or three. This recipe is much too watery as written, even if the bulgur is drained after cooking, which it should be. With my modifications I would give this a rating of four; it's still not the best tabouli I've ever had, but it's good and I'll make it again.

Mandarin Chicken Skillet

I wasn't impressed with this recipe. It was easy and quick to prepare, but not as good as other mandarin chicken or beef I've made. I feel that the addition of canned mandarin orange slices detracted from the dish a great deal.

Apple Pork Chops
