Sweet Coated Pecans

Reviewed: Dec. 11, 2006
This recipe is great! Used vanilla extract instead of water and mixed half the amount of white sugar with brown sugar. These are addictive - so watch out because they'll be gone before you know it!

Crab Crusted Grouper

Reviewed: Feb. 12, 2006
Excellent grouper - my friends and family loved it. Added chopped garlic and shallot and an extra can of crab meat as well as an italian blend of grated cheeses. You will not be disappointed with this recipe. Served it with baked asparagus and an orange and scallion salad.

Holiday Cranberry-Pomegranate Sauce

Reviewed: Nov. 26, 2007
Superb - There's nothing like fresh cranberry sauce. The pomegranate adds a nice touch. I also mixed in 1/4 cup Grand Manier. A true hit at the Thanksgiving Day table!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 26, 2007
Excellent - Did not bake it in the turkey. Prepared the night before and left out the liquids & butter. Just before putting in the oven, topped with 3 cups of broth and the melted butter. It came out moist and very tasty. Used pork sage sausage instead of turkey sausage Baked at 350 for 40 minutes. Thanks for an "awesome" dressing.

Brie Cheese Appetizer

Reviewed: Nov. 26, 2007
Absolutely wonderful - A great appetizer everyone will enjoy. Froze cheese overnight, sliced in half and topped with orange marmalade (apricot preserves work great also), dried cranberries soaked in water (this plumps them up) and toasted almonds. Wrapped it up in the pastry and baked 40 minutes at 350. Served with thinly sliced bagette bread. A definate keeper!

WOW! This is a fabulous recipe. Added only 1 can of beans and used fresh parsley as I didn't have cilantro. You won't be disappointed with this dish. Great for dinner parties.

Wonderful recipe. The sauce is unbelieveably tasty. Used fresh rosemary and instead of shallots, I used garlic and red onion. A definite keeper.

Chicken Breast Cutlets with Artichokes and Capers

Reviewed: Mar. 11, 2010
Fantastic - This is a great recipe. Restaurant Quality. If you thought the liquid was too thin, you didn't reduce it enough. I used a small jar of artichokes in oil and drained it. Added a large hand full of capers (always rinse under water and pat dry in a towel as they tend to be salty) and let the artichokes & capers blend with the broth until all was reduced to 1/2; returned the chicken to the sauce let that combine for 10 minutes or so and it was great. Nice recipe - a keeper for sure. One to impress guests

Stuffed Eggplant with Shrimp and Basil

Reviewed: Apr. 5, 2008
Absolutely Fabulous. This is the best stuffed eggplant recipe ever. Few minor changes in that I added a mixture of italian cheeses to the top (parmesan, mozzarella, asiago, romano, fontina) but that's it. Whenever eggplant is in season this is a must make. Thank you, Truckerdoo!

Great recipe. Only change I made was to add about 5 cloves of chopped garlic to the onion & pepper saute. Very tasty, super easy & pretty healthy. Will definately make again.
