French Breakfast Muffins

With the mixed reviews this received, I wasn't sure what to expect (but I had to try them). I don't know if the liquid amounts have been changed since the recipe first appeared, but this made into a nice batter that easily filled 12 muffin cups 2/3 full. I baked them for 22 minutes, then brushed the tops with butter (less than 1 T.)while still in the pan, sprinkled generously with cinnamon sugar and removed them to a cooling rack. My husband and I both think they're delicious! They have a nice light texture, and a nice spice taste, not overpowering. I used freshly grated nutmeg. I changed nothing in the recipe except the way I put on the topping.

Tequila Shrimp

I made this for my Christmas party last night and served it as an appetizer. It was delicious! I did use 2 pounds of shrimp, but followed the directions. I have some leftover that I think I'll serve for dinner tonight over pasta. I don't think the tequila was overpowering as some reviewers stated,

Wassail Punch I

I served this as the non-alcholic drink at my Christmas party last night and it was well received. I will make this again, but I would not put quite as much sugar in it. It was just a little too sweet, the cider is sweet and the orange juice is sweet so the ammount of sugar was a bit too much, maybe 1 cup less would be good. You could always add more when you're heating it if you thought it needed it.

Kerri's Holiday Punch

I made this punch for my Christmas party last night (all women)and everyone loved it. I only used 1/2 the bottle of Southern Comfort as I didn't want too much of the alchohol taste. Also, everyone had to drive home. I might increase it next time. There wasn't very much left over.

Best Brownies

I think this recipe made delicious brownies. My husband and my guests agree. Mine turned out like brownies, not cake. I followed the recipe and the directions exactly. Picture to follow when I make them again. We ate them all.

Delish! My recipe used more onion (1 small)and 2 T. butter mixed with the Panko, but otherwise the same. Everyone enjoyed this at my Christmas party and many asked for the recipe.

Warm and Creamy Bacon Dip

I thought it was very good. I followed the recipe. Instead of using bacon bits, I cooked a whole pound of bacon until crisp, then crumbled it. Just out of curiosity, I weighed it and it came out to just under 4 oz. Wow! I was surprised at that. I think the next time I make it, I'll try adding a little horseradish to it.

Zippy-Zoo Marinade

This was REALLY good! It only makes about 1/2 cup of sauce, but I brushed it on a family pack of chicken legs and refrigerated them for about 3 hours. I then grilled them for our dinner. The texture was good, like barbeque sauce, rather than a marinade, so it stuck to the meat. The next time I make this, which will be soon, I will double or triple the recipe, but NOT use quite as much black pepper. I changed two things out of necessity, I used light olive oil, and 1/2 t. ground ginger instead of fresh ginger root.

Ham Cake-ettes

I thought these were 'good' but not 5 star. I think I would have liked them better if they had more ham, less potatoes, but I would make them again as a side dish for breakfast with eggs and toast. I had a problem with mine breaking in the frying pan when I turned them. Maybe another egg would help?

Manicotti Alla Romana

I made this dish following the recipe. The only change I made was to make my own manicotti crepes. Many who rated this a 5-star recipe have made changes to the recipe itself. It was good, but I probably wouldn't make it again, as I think I would rather have plain 3-cheese manicotti served with Italian sausage or meatballs in sauce as a side dish.

Ultimate Party Meatballs

I've been using this recipe for years, except that I use my own homemade meatballs. Everyone loves them. The frozen meatballs remind me of dog food, there's just something 'off' about them. 5 star recipe if using homemade meatballs.

Chocolate Covered Cherry Cookies II

This is the exact recipe that I have been using for years. The difference is that my recipe makes 48 cookies, not 18. That is why so many reviewers have so much of the chocolate icing leftover. I roll the dough into 48 balls, then make the depression in them for the cherry. The larger ratio of cookie dough to cherry and chocolate is probably why some reviewers think this is a bland cookie, also. The cookies should be small so you can pop the whole thing in your mouth and get all the flavor at once. Oh...BTW...you might need more than one jar of cherries depending on what size cherries they are.

Roasted Butternut Squash Soup with Apples and Bacon

I didn't use the bacon, as I didn't have any, so I used a little olive oil and a little butter to saute the veggies. I would still only use the cooked and crumbled bacon for garnish rather than have all the bacon grease in the soup. I thought it was very good and will make it again as it was not difficult. I think the roasting (rather than microwaving) gave it a richer flavor.

Tried 'n' True Peanut Butter Cookies

I made 1/4 recipe using butter, as that's what I had on hand. I used a 1 T. cookie scoop and it made 88 2-inch cookies. As it is almost like the Toll House recipe (pb vs. chips and nuts), I figured I would get about the same yield and I usually get 6 doz. from that recipe. Very good. Nice and crispy.

Peach Bread

Very good! I used fresh peaches as I needed to use them up. The only other change I made is I used 1 teaspoon of cinnamon and that was all I had, so I added 1/2 teaspoon of freshly grated nutmeg. I followed the rest of the recipe exactly. I used the clay Pampered Chef loaf pans, sprayed with cooking spray and a small sheet of parchment just on the bottom so it wouldn't stick when I took them out of the pans.

Cherry Crunch

This is almost exactly like my recipe that I've been using for years. The butter,flour, sugar and oats are the same, but I don't use cinnamon and I DO use 3/4 t. baking powder and 1/4 t. salt. I just happened to have made this tonight and then saw the photo. One thing that I might recommend is to mix the crumbs with your hands. The warmth of your hands softens the butter and makes nice little clumps instead of dry powdery crumbs.

Chicken and Broccoli Braid

We really liked this. It made a nice, easy supper with ingredients I happened to have on hand. I didn't have any almonds, so I used toasted pumpkin seeds. I didn't have dill weed, so I used fresh tarragon from my garden. Other than that, I didn't change anything. The broccoli could have been done a little more to suit me (and I chopped it quite small), but I liked it anyway.

Chicken Stuffed Shells

I made this recipe for dinner tonight. Going by the VERY mixed reviews, I wasn't sure how it would turn out. I followed the recipe with the exception of using cream of mushroom soup instead of cream of chicken, because I accidentally bought the wrong one when I went to the grocery store. Duh! We really liked it! I served the shells with steamed broccoli. Everyone went back for seconds. I used Stove Top whole wheat stuffing mix for chicken. It added a nice sage taste to the filling. I had a family pack of chicken thighs, so that is what I used. I put them in the oven, covered, while I went to the grocery store and they were done when I returned. I chopped up the all meat after it cooled, then I put the filling together. If I had been thinking, I would have used the broth from the chicken pan for the gravy, but I had already used the Swanson's that I bought before I thought of it. I added 1 t. garlic powder but no additional salt and pepper. The soups, broth and stuffing mix all have PLENTY of salt. I will definitely make this again.

Lemon Yogurt Muffins

These muffins turned out very well. I followed the recipe exactly and thought they had plenty of lemon flavor. They were really enjoyed by my granddaughter who ate more than her share. I used a regular muffin tin, but the recipe made enough for 14 muffins, so I had to put the last 2 scoops of batter into individual muffin cups. That was nice, though, because my husband and I got to taste them before we took them for Easter brunch.

Gingerbread I

I made this cake as the recipe states, with one exception. I only had dark molasses, so I replaced about 1/3 of the amount with clear Karo corn syrup. I thought this cake tasted good, but did not have the pronounced ginger flavor I wanted and I thought that it was just a little on the dry side. I served it with a vanilla custard sauce (I just used 1/2 my homemade vanilla pudding recipe and added more milk)which made up for the dryness. I think that more powdered ginger (or a little fresh) and maybe the addition of a little bit of yogurt or sour cream (1/4 C.?) would bring this up to 5 stars.
