Beet Salad with Almonds and Chives

I followed the recipe exactly and was rewarded with a delicious salad! The flavors blend ino this tangy, earthy delight. Recipes like this make me want to have beets all the time. A keeper!

Ensalada Rusa

This is simply wonderful. The combination of four simple ingredients couldn't be better. The crunch of the beets, followed up with their earthy taste is the perfect complement to the potatoes and eggs. Once you stir in the mayonnaise, the pink hue makes it even more interesting. Season to your own taste. This recipe is great without any changes

Chickpea and Chicken Curry

This recipe is AMAZING! I just made it for dinner and it was a hit. I read other reviews and omitted the lemon juice because I couldn't see how its addition would enhance this rich and tasty dish. I might have been a little heavy handed with the spices because I think the curry (I used sweet curry) the clove and the cinnamon combined are crazy tasty. The garbanzo beans add texture and wonderful flavor. The chicken absorbs all the flavors. I can't say enough how well this dish came together. I served it over jasmine rice. Definitely a keeper! Thanks for a great recipe!

Amish Potato Salad

The flavor is excellent, but like some other reviewers, the salad dressing was too runny and way too abundant given the salad ingredients. I'm disappointed with the result after the time, ingredients, and expectations that went into it. I'm hoping that a day later, more of the dressing will have absorbed into the salad ingredients.

Jo's Rosemary Bread

This bread is delicious! I didn't have any dried rosemary (ridiculous, I know) so I just used a tablespoon (slightly rounded) of Italian seasoning. I made the dough with the dough setting on my bread machine and then kneaded it briefly, adding some flour, and put it in a loaf pan for a second rising. I followed a suggestion here to brush the loaf with olive oil and sprinkle on some coarse salt. I baked it for 30 minutes at 375, spritzing the loaf with water at 10 minutes and again at 20 minutes. The bread is beautifully shaped and exceptional tasting. Hearty and satisfying. Sometimes you just have to embrace the carbs of white flour and enjoy home baked perfection!

Spiral Pasta Salad

This pasta salad was a big hit at a work luncheon. The dressing is so different than typical pasta salads. Like many reviewers, I added vegetables not in the original recipe (cucumbers, yellow pepper, and broccoli) and skipped the celery (not a big fan). The vegetarians in the group were thrilled with a salad that doesn't need any kind of meat to bulk it up. A keeper!

Debdoozie's Blue Ribbon Chili

This recipe was so easy, and the rewards were great. Just a zesty, tasty, red chili. We grated cheddar for sprinkling on top. A dollop of sour cream would have been tasty, too.

Black Russian Cake I

This has been a family favorite for a long time. The only change I would recommend is skipping the confectioner's sugar/coffee liqueur drizzle/frosting as it is completely unnecessary...and makes the cake gooey. This cake is moist enough (and incredibly delicious) without the addition after baking. Yum!

Gingerbread Cupcakes with Cream Cheese Frosting

I was a little disenchanted with the outcome. The batter made enough for more than 12....so some of the cupcakes baked well over the top, making it difficult to remove from the cupcake pan. While I love ginger and molasses, I just didn't love the flavor of these. Another reviewer had issues with the allspice (I agree) and suggested adding ground cloves (another idea I think would improve these). I substituted butter cream frosting for the cream cheese frosting, and that was the only saving grace. I found myself cutting off the bulk of the cupcake, and just eating the top (a more palateable ratio).

Crispy Rice Candy

I know this recipe as "Peanut Butter Meltaways" but the quantities differ slightly. My recipe uses the same amount of each ingredient except for my recipe calls for 1 lb. white chocolate (1/2 of this recipe's chocolate). I think this ratio makes the spoonfuls more manageable and the whole concoction not as terribly sweet as many reviewers mention. This has always been a unique treat to share with family and friends. I am a little tempted by the reviewer who added peanut butter captain crunch, one of my favorite guilty pleasures.

Rotisserie Chicken

This chicken turned out fantastic. We followed the ingredients list exactly and the cooking times were followed exactly. Thanks to the other reviews, made sure we tied the legs/wings with string and used an old 13x9" cake pan as a drip pan. We have always really enjoyed the grocery store rotisserie chickens, but now we will be making our own. Yum! The reviewer who added garlic powder has a great idea, as I am sure that would be tasty!

Tex-Mex Burger with Cajun Mayo

This was a big hit at our house. The mayo/cajun seasoning mix provided ample leftovers for my dipping happy son, who can't eat any kind of meat without indulging in a dip! The burgers were very tasty and a nice change of pace. A leftover burger reheated well two days later and the same son, upon eating the leftovers, sighed a long sigh and declared, "this burger is really good!" I didn't have cajun seasoning on hand, but found a recipe compiled of things I had on hand (cayenne, paprika, onion powder, garlic powder, salt, black pepper, oregano, and thyme). That low-carb cookbook still comes in handy!

Caramel Bars

This recipe is great....almost gave it four stars because I can't imagine making it without doubling the flour/oat/sugar mixture. I use one entire flour/oat/sugar recipe for the bottom crust, then follow the recipe quantities and top it all off with another round of the dry mixture. I agree that you do not need to use heavy cream with the caramels....half and half or even milk work just fine. I am asked for this recipe every time I take it somewhere...and I always give them the adjusted version. This is a big favorite in our lives.

Thai Chicken Pizza with Carrots and Cilantro

We really enjoyed this pizza. We went against our instincts to make pizza dough from scratch for the crust (we are snobbish about our crusts!) and bought a thin crust Boboli. We were surprised at how good it was. The flavors in the toppings greatly resemble the Thai Chicken Pizza from California Pizza Kitchen. Yum! Even though many toppings are added after the pizza comes out of the oven, the leftovers reheated very nicely the next two days! Can't beat that! I followed the recipe exactly, so no adjustments were needed from our kitchen.

Black-Eyed Pea Gumbo

This gumbo is excellent. The flavor is perfect without all the spices other reviewers felt they needed to add. I did use two cans of rotel tomatoes (instead of one rotel, one regular diced tomatoes) and omitted the celery (not a fan). I added carrots for color. I also cooked it at very low heat for much longer than recipe indicated, which may have accounted for the rich flavor. This was a big hit....served with corn bread as suggested. Yum.

Peanut Butter Popcorn
