Chicken Dijon

I'm sure this is a great recipe alone, but I used it as a base to recreate one of my favorite restaurants dishes. I seasoned the chicken with lemon-pepper seasoning & then followed the rest of the sauce prep. I then placed the chicken on a bed of cooked spinach, topped with the sauce & provolone cheese. Then I baked it for a few minutes to melt the cheese. To die for!

Fettuccine Alfredo V

Delicious! I love this recipe. I've made it as directed & it was fabulous. This time I made it using Irish butter with herbs & it's fantastic. If you're not a garlic fanatic, you may want to cut the garlic in half. Yummy yummy!

YUMMY!!! This recipe is absolutely perfect as is! I've made it twice now & both times my husband & I have thoroughly enjoyed it (perhaps too much). Very easy & yummy! ETA This has become a regular staple in our menu planning. It is delicious!

Chicken Piccata II

We double or triple the the sauce because it's so good & we enjoy it on angel hair pasta. We also pound the chicken out thin into a cutlet. The chicken cooks faster & absorbs the flavor better. We've also added capers & artichokes when we have them on hand. This dish is a regular in our kitchen!

Rich and Simple French Onion Soup

Delicious! I did make a few changes. I caramelized the onions; this is part of what gives the soup it's richness. I also used homemade croûtons for my bread. I prefer the flavor & texture they add to the soup as opposed to untoasted bread. My favorite to use are rye croutons.

Great recipe! If you don't like vinegar, this is NOT FOR YOU! This was a summer staple in our house when I was a kid. It's a bit sweeter than my Mom made, but still good. Add green peppers for flavors. This is best if it marinates overnight.

Japanese Ginger Salad Dressing

Perhaps my expectations were too high, but this dressing was very disappointing. It was extremely garlicy. I love garlic & it was just too much. It also had a heavy olive oil taste, which is certainly not a Japanese flavor. If you're looking for a dressing similar to Benihana's or other Japanese steakhouses, this is certainly not it, keep looking. After one serving, we did not eat any more.

Chantal's New York Cheesecake

AWESOME! I made this last night & it was FABULOUS! I don't know if my springform pan was smaller than 9" or what, but I had too much batter & ended up putting it in an extra dish & baking. My top also cracked, not sure what's up with that. But the taste is great!

No Bake Cookies III

I made this recipes EXACTLY as written & it turned out perfectly. These were exactly what I remembered as a child & had a craving for. I wish people would stop complaining when they don't follow the directions & whine the recipe wasn't good. Unless you actually follow the recipe, don't bother reviewing. Coconut milk is not the same as regular milk.

Red River Beef Stroganoff

Taste was fabulous! Made 2 changes to the recipe. 2 large onions seems like an excessive amount of onion, so we scaled it back to 1 onion & it was plenty. We used fresh sliced button mushrooms rather than jarred. Very happy with the dish!!

Grandma's Corn Pudding

Delicious! I made this for Easter & everyone loved it. It did need to cook a bit longer than the recipe stated. I also drained the whole kernel corn (not stated in recipe either way). Otherwise, perfect! The folks who think it's too eggy are obviously not familiar with true Southern corn pudding. This really was just like Grandma would make!

Best Bread Machine Bread

Just tasted my first piece & hubby & I agreed that it was the lightest bread to come out of either of our bread machines - ever! We've each had a bread machine for 12 or 13 years, so a lot of loaves. I did follow the recommendation to add 1.5 t salt. I used AP flour & followed the Joy of Baking's substitution rule of 140 grams AP. When I cut into this bread, I joked with my husband that we'd made a loaf of Wonder bread. Much tastier, but that gives you the idea of how light it is.

Tartar Sauce I

Use dill pickle, not sweet pickle. The lemon juice is also not optional! You need it to get a good flavor. Follow those two tips & you'll get tartar sauce like you find up North. Tartar sauce is so simple, it's surprising how often it gets messed up!
