Sweet Potato Casserole VI

These are by far the best sweet potatoes I have ever had. I've made this every Thanksgiving for years & finally got around to reviewing it. This is like a delicious crustless pie. I've shared the recipe countless times. It's always a big hit. No changes needed! I boil the potatoes in their skins, until they're tender. Drain the potatoes & let cool a bit. Then you can slide the jackets right off & mash the potatoes. Don't buy canned potatoes! Start with fresh & you'll be much happier.

Vegetable Dill Dip

I couldn't find beau monde seasoning so I substituted Cavender's seasoning. I made the dip the night before, which allowed the flavors to blend together. The bowl was scraped at the party. I thought it was pretty good & obviously my guests agreed.

Hamburger Steak with Onions and Gravy

Pretty good recipe but nothing outstanding. I followed the recipe exactly. After adding the beef broth & sherry, I realized I should have definitely doubled the gravy. I wound up adding another half cup of beef broth & the gravy was still thick enough. So I think you could easily add another full cup & not add more flour. I didn't feel like the gravy had enough depth to it, so I added a dash of Kitchen Bouquet (careful, just a little will do & too much will ruin your dish). Added the beef back to the gravy & simmered. The patties were fork tender, practically falling apart. A very good dish, but not out of this world. I think comparing it to an old fashioned TV dinner is selling it a bit short. It's better than that. I'll definitely make it again.

Sassy Tailgate Sandwiches

There is a step missing that will help people who thought the sandwiches were too soggy. After you've baked them for 20 minutes covered, remove the foil & bake for another 5 minutes. This browns & crisps the top of the rolls. This step is included in Caren's original recipe. I made these for the second time today (the first was when the recipe was originally posted on Food Network). The recipes are very close to identical - one makes chive & onion creamed cheese & the other you buy it premade. I also used grated swiss cheese this time - much cheaper & as delicious. Both times the sandwiches were devoured. A hit with everyone.

Perfect Snickerdoodle recipe! The cookies are soft & delicious. 8 minutes was just right. I used my one tablespoon scoop for perfect portioning. No changes needed to this recipe.

Brown Sugar Meatloaf

This was just OK. It didn't wow me at all. The meatloaf was very bland. I took other poster's advice & added garlic & Worcestershire sauce. Maybe I didn't add enough. It definitely needs something more. I did take the advice of putting the sauce on top of the loaf instead of the bottom & think that's a good suggestion. I don't understand the raving about this recipe.

Slow Cooker Beef Stroganoff I

We did not like this recipe at all. I love Beef Stroganoff; it's one of my favorite meals. But I don't make it often because of the time involved. I thought I'd try this shortcut recipe. It was a complete disappointment to both my husband & me. I really don't understand why people are raving about it.

Mini Crescent Roll Burgers

Fake White Castles! These are delicious if you triple the ground beef. We've made them for years with 1-1.5 lbs ground chuck, 1 packet of soup mix, 2 cups of shredded cheddar cheese & PICKLES! I can't believe they don't have pickles in the recipe. One dill pickle slice per sandwich. You'll need 3-4 packages of rolls, depending on how much you stuff them. They're always a big hit at tailgate or any other party.

Sloppy Joes II

Great recipe! Just like the Sloppy Joes I grew up eating. Simple & easy. We have these pretty frequently because they're so fast, easy & delicious & the ingredients are all stuff we normally have on hand. I'm not sure what the folks who gave it negative reviews expected. It's a Sloppy Joe, not Beef Wellington!

Easy Apple Cinnamon Muffins

I made these muffins exactly as written & they are fabulous!! I'm not sure why others have a problem with them. I doubled the recipe because I wanted a dozen; it made 18. Not doing to ding the recipe for that! I did have a bit of topping leftover as well, no big deal. The muffin topping did spread a bit but when you use a nice non-stick muffin pan, no worries.

World's Best Lasagna

I made 4 pans of this for my son's birthday party yesterday. I received so many compliments on it. The highest compliment came from my friend who is Italian. He said lasagna is his favorite food & mine was delicious. I followed the recipe exactly, no modifications (except 1 pan with turkey Italian sausage) & it was perfect. I can't imagine leaving out the fennel as some have suggested. It is a key ingredient for the right flavor! I bought ground sweet Italian sausage. No need to remove casings. Browned it with the beef. I did drain the grease which is not a step listed. So 1 slight modification.

Tartar Sauce I

Use dill pickle, not sweet pickle. The lemon juice is also not optional! You need it to get a good flavor. Follow those two tips & you'll get tartar sauce like you find up North. Tartar sauce is so simple, it's surprising how often it gets messed up!

Best Bread Machine Bread

Just tasted my first piece & hubby & I agreed that it was the lightest bread to come out of either of our bread machines - ever! We've each had a bread machine for 12 or 13 years, so a lot of loaves. I did follow the recommendation to add 1.5 t salt. I used AP flour & followed the Joy of Baking's substitution rule of 140 grams AP. When I cut into this bread, I joked with my husband that we'd made a loaf of Wonder bread. Much tastier, but that gives you the idea of how light it is.

Grandma's Corn Pudding

Delicious! I made this for Easter & everyone loved it. It did need to cook a bit longer than the recipe stated. I also drained the whole kernel corn (not stated in recipe either way). Otherwise, perfect! The folks who think it's too eggy are obviously not familiar with true Southern corn pudding. This really was just like Grandma would make!

Red River Beef Stroganoff

Taste was fabulous! Made 2 changes to the recipe. 2 large onions seems like an excessive amount of onion, so we scaled it back to 1 onion & it was plenty. We used fresh sliced button mushrooms rather than jarred. Very happy with the dish!!

No Bake Cookies III

I made this recipes EXACTLY as written & it turned out perfectly. These were exactly what I remembered as a child & had a craving for. I wish people would stop complaining when they don't follow the directions & whine the recipe wasn't good. Unless you actually follow the recipe, don't bother reviewing. Coconut milk is not the same as regular milk.

Chantal's New York Cheesecake

AWESOME! I made this last night & it was FABULOUS! I don't know if my springform pan was smaller than 9" or what, but I had too much batter & ended up putting it in an extra dish & baking. My top also cracked, not sure what's up with that. But the taste is great!
