Drop Biscuits and Gravy

I made these this morning- vegan style. SmartBalance organic for the butter, soy milk for the milk, and soysage for the sausage. Delicious! The only give-away to the veganness of this was that I used vanilla soy milk without thinking... Soooo the gravy was a bit sweet. Fun, though! Thanks!

Zucchini Tomato Pie

Great base recipe. I rated it four stars not for flavor (you can't screw up garden vegetables or call them bland in my opinion!) but method; I think it's necessary to saute onions and zucchini before putting it in the oven. I added red pepper flakes and garam masala and am glad I did.

Warm Jalapeno Cheese Dip

was craving cheese dip and i'm so glad i found this recipe! using evaporated milk and flour hadn't occurred to me. I added canned green chiles and not so much salsa, due to what I had on hand. I think I used too much tumeric, so next time I'll tone that down to my tastes. This is wonderful!

Fried Okra

disgusting. all the batter fell off during the first two seconds of frying. what's left is slimy okra and fried cornmeal. i don't know how others got this recipe to work; i found it to be a disaster! sorry!

Hearty Turkey Soup with Parsley Dumplings

Southwest Squash Casserole

I used this great idea for my casserole tonight. Sliced squash, mushrooms, onions, and jalapenos with sour cream, salsa and cheese. Topped with a mixture of breadcrumbs and tortilla chips. I modified it to accomodate what ingredients I had on hand. I also didn't microwave it; baked at 350 until squash was tender. Thanks so much for this tasty alternative to bland, mushroom soup squash casseroles.

Easy Indian Style Okra

another way to do this recipe is to slice one side of each okra lengthwise and stuff it with the spices. some spices will fall out and coat it during pan frying. tasty!

Potato, Broccoli and Cheese Soup

good recipe. i do not think it is necessary to use the same amount of cheese as broccoli... this can be a very healthy soup. I used olive oil instead of butter, added way less cheese, and I didn't see the importance of cooking the broc seperately.. it can be added a little after the potatoes and boils fine... This was great. Thanks!

mmm tasty. 1: the eggplant won't dry out. it'll get mushy as it cooks (one reviewer added oil because of concern of this). 2. this recipe totally looks appetizing! great way to serve fresh veggies. i think when i do this again i'll add some fresh basil. but yum! thanks!

Mimi's Eggplant Casserole

I made this recipe because I had an eggplant going bad and had all these ingredients. I poured batter over the top rather than crumbs... used less cheese. This was tasty, but the eggplant was drowned out and I feel there are better ways to accentuate its flavor. Also this is a really unhealthy way to eat a healthy food! Anyway, good recipe, but won't make this again. Thanks Mimi!

Apple Strudel Muffins

Love the idea of putting the crumbs on top. I added a smushed up over-ripe banana that I had laying around and wanted to get rid of-- I'm glad I did, banana adds moisture and flavor. Also, ground up some nutmeg and cinnamon. Pretty darn good treat for Easter Sunday. To the reviewer that had muffins that turned out dry and hard: you cooked them too long; nothing wrong with this recipe. Thanks!

Garlicky Summer Squash and Fresh Corn

Nothing extraordinary, but quite tasty. I love squash cooked this way. I added some diced tomatoes (from a can, but fresh would be better), and added fresh oregano and basil at the end rather than parsley, since I haven't grown that yet. The butter flavor was a nice touch; I wonder if it would taste better if the veggies were sauteed in butter rather than olive oil at the beginning? Also if I had had white wine on hand I would have used that instead of veggie broth. Anyway, good recipe for summer veggies, thanks!

Veggie Pot Pie

This is excellent. Also, if you don't waste a lot of time chopping the vegetables into small pieces, it is not very much work at all. I cut the mushrooms in half and made the veggies large. Didn't have cauliflower; I used frozen green beans, peas, and corn (which also cuts down on chopping!). If you use broth with sodium you definitely don't need to add salt (there is lots in soy sauce and broth normally). I doused it with pepper, used heaping tablespoons of cornstarch, and it was just wonderful. Thanks!

mmmm... not the best homemeade brownies, but certainly tasty! i'm glad i tried this recipe. use dutch cocoa and, if you have it, grind a bit of nutmeg into the batter.
