Oatmeal Blueberry Muffins

Low in fat and sugar and high in fibre and fruit - these muffins taste great and are healthy enough to be eaten often. Although I tend to increase the sugar to 1/2 a cup (and use dark brown sugar for flavour), I think the proportions in this recipe are good. The texture of these muffins is lovely and easy to achieve. Although "healthy", my boyfriend asks me to cook them often. A keeper! Thanks Sue.

Orange Rice Cake

I made this cake for a wheat-free friends birthday. The cake went down well with everyone. I halved the recipe and made one small round cake. I added vanilla to the recipe and iced it with a frosting made with more orange zest, the squeezed orange juice and powdered sugar - I definately recommend doing that for a zesty citrus flavour. I would make sure you allow the rice to cool properly before you add it to the creamed butter and sugar. It tastes a little like a rice pudding rather than a real cake since there are still whole grains of rice. So the texture is different but it has a delicious flavour and I will definately make this again. I may also try doing this with apple & cinnamon instead of orange. Thanks for sharing this recipe.

Frozen Latte Dessert

This recipe is a fantastic concept and I will definately be making it again - however with changes. Next time I will add sugar to the base - I loved the flavour of the nuts but it was just butter and flour - bland. I normally reduce the amount of sugar in recipes but for this one, definately add sugar. I will try maybe 1/3 cup of sugar(powdered?). Or you could use a cheesecake base for this recipe (graham cracker crumbs and butter). I also didn't have chocolate syrup so used melted dark chocolate instead which tasted really good. Thanks for the recipe, its a keeper!

Penny Buns

This is a fabulous recipe. I was desperate for a good hot cross bun recipe to make at Easter and this worked really well. I changed some of the ingredients and method slightly to suit - I omitted the egg, and instead creamed the butter and sugar with the cinnamon (I also added nutmeg, vanilla essence and citrus peel to the fruit). I prefer to make smaller buns so I cut the dough into eight pieces and made four small buns out of each piece - 32 total. I found them sweet enough if using a sugar glaze on top. Thanks very much Arvilla - you saved my first Easter in Japan.

Orange Sponge Cake

Perfect - a really straightforward recipe that produces a delicious cake. I have made it twice now and added 2 T of a chunky homemade marmalade for even more flavour (I also reduce the sugar slightly to just under 1 cup to compensate for the extra sweetness of the jam). I like to slice it in half and spread it with whipped cream that has had 100g of melted dark chocolate whipped into it. I then ice it with a dark drizzly chocolate icing. You could also spoon a little Grand Marnier onto the bottom layer before you put the cream on. This was my solution to a request for a Chocolate/Orange birthday cake!

Simple Sponge Cake

This was a good easy recipe to make, I added 2 Tablespoons of cocoa to make it a chocolate sponge. I made two chocolate sponges and sandwiched them with cream as a birthday cake.
