About this Cook
Professional photographer in the Philadelphia Area. I photograph weddings, kids, families, couples, pets, high school seniors, etc.
My favorite things to cook
desserts - they're the most fun. i get a lot of satisfaction from making hearty vegetarian meals too.
My cooking triumphs
Vegetarian chili that tastes so good and is so easy to make.
My cooking tragedies
cookies! i'm pretty sure i substitute too many ingredients to make them less fattening and end up with scones almost every time!

Black Bean Brownies
Like many others, I made the following substitutions: 1/2cup applesauce instead of the oil, upped the cocoa powder to 1/3, upped the vanilla to 2t, added 1t baking powder, and used the instant coffee. I didn't use the chips. This brings the calories to 106 and the fat to 1.4g. My cooking time wasn't great (I accidentally turned off the oven part way through and had to restart) so they weren't as dry as they probably should have been but the result was delicious. I'll certainly be making them again. Decadent, chocolatey, a hint of coffee, and no bean taste at all. I can't wait to share them if I can keep out of them for that long. I wonder what would happen if I subbed out some or all of that sugar since it is so much for an otherwise healthy dessert.

Pesto Sauce
I'm with many of the others. It was way too walnutty. Next time I'll bring the amount down by a lot (1/2c maybe) and up the parm. I ended up with a huge batch because I continued to add basil, garlic, and parm to try to drown out the heavy walnut flavor.

Crispy Edamame
Just not good. Dried them, baked them on a parchment sheet lined cookie sheet, stirred them a few times during baking... Fairly tasteless, dry, not especially crispy. Tossed most of them in the trash.
