Broccoli, Rice, Cheese, and Chicken Casserole

Reviewed: Feb. 16, 2005
I really enjoyed this recipe. It was quick and easy to make. My husband loved it and it made enough that I could freeze the remainder. I did add a touch of pepper.

Savory Garlic Marinated Steaks

Reviewed: Apr. 10, 2005
This recipe is definately a keeper. It was still on the grill when my husband said that we would have to do it again for the aroma alone. It kind of tasted like teryaki beef jerky, but it was very good. I kept the recipe the same.

Hamburger Hash

Reviewed: Jun. 12, 2006
Sorry, this one was not for us. I followed the advice of others and added garlic, worchestershire, and other seasonings, but all I could taste was bland and blah. It had the consistency of thick soup. It was tolerable, but thats all. The family participated in a "destroying of the recipe" party.

Garlic Chicken Fried Chicken

Reviewed: Aug. 23, 2006
This one is definately a keeper. My husband loved it. I took the suggestion of others and increased the amount of garlic. Also, I only had plain bread crumbs on hand, so I added a touch of seasoned salt.

Chicken and Bacon Chowder

Reviewed: Dec. 27, 2006
This recipe was okay. My husband and I both felt that it was way too salty. This might have been because of the bacon or because I used canned chicken.

Portobello Penne Pasta Casserole

Reviewed: Jan. 8, 2007
Sorry about the score, but my husband did not even want it to rate this high. My husband, who usually loves spinach, felt that this had too much spinach. Also, the dish lacked flavor. I had to add extra seasoning after it was served. I did enjoy the alfredo sauce and felt that it had a good consistency. I will probably not make this dish again.

Southern Praline Pecan Cake

Reviewed: Jan. 13, 2007
This cake had a wonderful aroma while baking and had an even better flavor. I took the advice of others and used slighly less than 1 cup of water. The cake was a bit crumbley when slicing; however, this slight flaw was quickly forgotten after tasted.

Sherry Apple Pork Chops

Reviewed: Apr. 13, 2007
Overall, my husband liked the flavor of the recipe, but he did not like the apples WITH the pork. We are from the South, hwere baked apples are a breakfast staple, and he could not get past having these apples for dinner.

Cod with Italian Crumb Topping

Reviewed: Oct. 5, 2007
This was good. I made some slight changes and followed the advice of others on this site. I subsituted fat-free mayo w/ 1T of lemon juice for the egg white. I also added some Emerils Essence to the spice mixture and omitted the cornmeal. I also used Hake, which is a cousin to Cod b/c I had it on hand. The only thing I would do different next time is roll the fish in the spice rather than top it. We really enjoyed the flavor.

To Die For Blueberry Muffins

Reviewed: Oct. 11, 2007
This was great! I took the advice of others and added a tsp of vanilla. I was suprised that it made 12 muffins. My crumb topping did not come out just right, but I think that I added too much butter. My husband loved these!

Busy Day Chicken Rice Casserole

Reviewed: Oct. 23, 2007
Overall, this recipe was very good and very easy. I used cream of chicken instead of the cream of mushroom (I like the flavor better) and used chicken tenders. While I like the Onion Soup Mix topping, I think next time I will crumble some butter crackers and use that for topping instead.

Skillet Balsamic Chicken

Reviewed: Nov. 14, 2007
I fixed this for dinner last night and my husband could not quit complimenting me. I followed the advice of others and used 1/4 c. balsamic vinegar along with 1/3 c. of red wine vinegar. I mixed this in with 1/2 c. chicken broth and poured it over the chicken after it had browned. I also added a dash of basil with the oregano and 2 teaspoons of Italian dressing. Also, I did not have a fresh onion on hand, so I used dried minced onion. It was great served with garlic mashed potatoes and black-eye peas. I will make it again!

Hot Artichoke Spinach Dip

Reviewed: Dec. 16, 2007
We love this recipe!!! I followed the advice of other reviewers and subsituted the sour cream with mayo. However, I did add a tablespoon of sour cream to the mix before placing it in the baking dish. Also, I layered the mozarella cheese throughout the dip. It was wonderful.

Jif® Peanut Butter Fudge

Reviewed: Dec. 23, 2007
This one is great! My mom always used this recipe as I was growing up and I was glad to find it on this site. The fudge has a great flavor and did not come out grainy. I will definitely make it again!!!

Flavorful Tomato Soup

Reviewed: Jun. 30, 2008
This soup was easy, came together quickly, and had a great taste for semthing so simple. To give it a little more substance, I added a drained can of petite diced tomatoes. I gave it a 4 because it seemed a bit thin. I wish it would have been more creamy.

Chocolate Peanut Butter Bars IV

Reviewed: Jul. 3, 2008
These are great. I added my peanut butter into my hot butter so that it would blend smoothly. I also allowed these to set for a few minutes in the freezer before cutting them. I then placed them in the fridge so that they could finish setting.

Zucchini Corn Fritters

Reviewed: Jul. 31, 2008
The flavor in these fritters was wonderful. I love the blend of the corn and zucchini together. However, my mixture came out way too thin (even after draining the kernal corn). I followed the recipe, so I do not know where I went wrong. In an attempt to thicken the batter, I added a can of creamed corn. I then fried them like pancakes. This one is worth another try and I will work on getting the recipe thicker.

Fabulous Fast Shrimp

Followed the advice of others and used Cream of Shimp soup. Also, I added some Old Bay Seasoning and Emeril's Essence to the soup mixture. Great flavor. Look forward to making it again.
