Peanut Butter Chocolate Chip Banana Bread

Yum! This bread was delicious, and will be my go-to recipe from now on. I don't usually like chocolate chips in banana bread, so I skipped them, but I think I'll give them a shot next time.

Awesome Blueberry Muffins

Add the blueberries right after step 4 - or add 2 cups of what you prefer to add. I make these muffins all the time - they are delicious and never last long!

Fluffy Pancakes

I'm used to dutch pancakes, which are more like crepes, but when breakfast time for the kids rolled around and I had just one egg, this recipe came in very handy. It would've been a 5-star recipe if not for the fact that until I added another 1/4 cup or so milk the batter could not be poured. Even then, I never had bubbles appear on the surface of the pancake. They were still delicious, and I've saved the recipe for my husband, who's been trying pancake recipes for ages, but is never happy with the result.

Slow Cooker Tapioca Pudding

I'm not a huge fan of tapioca, but my father-in-law is, and he's never happy with tapioca you can buy prepared. I gave this recipe a shot, becasue it seemed so easy, and not only was it easy, but he loved it. For newbie tapioca makers, be careful to turn off the crockpot when you think the pudding is almost done - if you don't, it'll be overcooked just enough to bother you.

Broccoli Casserole

I was really impressed - after getting the casserole prepped, I stuck it in the oven and ran an errand. When I came back home, I discovered the oven had not heated up properly, and was only at 100 degrees. I tried again, at a higher temp, and even though it didn't end up pretty, it was tasty enough that everyone, from my toddler to my in-laws, cleaned their plates. That almost never happens. What will it be like if I get the recipe right, I wonder? I'll test it out soon, that's for sure!

Best Carrot Cake Ever

This cake lives up to its name. The only problem I have with it is that I eat too much, so I like to make it in cupcake form (it makes about 30). Also, if you want to make it lighter, use a 1/2 cup applesauce and 1/2 cup oil, and use 2 eggs and 4 egg whites instead of the eggs. I have also substituted coconut for the walnuts, which worked out really well.

Spinach Chicken Parmesan

Peking Pork Chops

Chicken Papadoris

YUMMY! I couldn't stop licking the spoon I used to stir. I used boneless, skinless chicken thighs, and added some extra soy sauce, and in the future will add chili flakes, but all-around my first attempt at Indian-style cooking was a big success, thanks to this recipe. Again - yum!
