Elegant Orzo with Wilted Spinach and Pine Nuts
Delicious! I over cooked the pine nuts but that was my own fault. And despite that I cook with spinach at least once a week, I always forget how much spinach cooks down once wilted/steamed/etc.... just a reminder!

Quinoa and Black Beans
I absolutely loved this! I followed the recipe but only used one can of black beans as recommended by other reviewers. It was almost almost a 50/50 ratio of quinoa and black beans, slightly more of the quinoa. If you want to give it more kick, use more seasonings but if you want to taste the quinoa, the seasonings as directed give everything a nice balance of flavor!

Groovy Green Smoothie
I made this in the food processor using all the ingredients. I left the peel on the apple and only used approximately a cup of spinach. It was absolutely delicious! It wasn't completely smooth with the apples and other small chunks so you could chew it some which I liked! This was my first successful smoothy!
