Connie's Zucchini "Crab" Cakes

These were pretty good. The kids ate them, so that's a plus! Used Emeril's Original Essence seasoning because I didn't have Old Bay. Still turned out great. Would like to try baking them as one reviewer suggested. Just to make them healthier.

Zucchini Pie

My family loved this! I should have doubled it for my family of 7. Used cheddar instead of Parm. used half the oil, added 1/4 c. green peppers, 1/2 c. onion, 1/4 c. shredded carrots (cause I had them on hand), needed to bake a little longer, more like 40 minutes. Overall, a great easy recipe.

Funnel Cakes IV

These were so easy to make & so yummy! My 13 year old made them pretty much by himself. It does make a lot, so we have the rest of the batter in the fridge for tomorrow. Hopefully it will cook up just as good the next day. It took us a couple of tries to get the technique down, but then it was a cinch! OH SO fattening, but anything deep fried is going to be!

Simple Whole Wheat Bread

We loved this bread!!! I made 2 large loaves & 2 small loaves (for my 4 yr old-she likes to have her own)I used a little less bread flour & a little more wheat flour I also subbed 1/2 c. 7 grain cereal for some of the wheat flour (it was what was left in the package). I'm making it again today!!So yummy plain or toasted with butter or honey butter. My kids devoured it!

Rhubarb Strawberry Crunch

This was really yummy! I used a little more fruit, & sprinkled a little cinnamon & nutmeg in with the topping, but kept everything else the same. I actually halved the recipe (& used 4 c. fruit) & baked in 7X11 pan. Never cooked rhubarb before, so wasn't sure how big the pieces should be. Turned out great though. Even 11 yr old liked it. Serve with vanilla ice cream.

Baked Ziti III

This was really good. I accidentally added all of the cheese in the first layer, but still turned out great. My whole family loved it. I used sweet venison sausage for the beef & dried basil(my store didn't have fresh)I also added the sour cream to the pasta as other had & dolloped some as I layered it too. It does make a lot. It fed my family of 6 & we will have enough leftovers for tomorrow for a quick dinner. Thanks

Cookie Dough for Ice Cream (Eggless)

This is pretty tasty. I also had to add more flour to get the right consistency. I followed other reviewers suggestions and added 1/4 t. salt, used 3T butter, milk instead of water, & mini chocolate chips. I still think it's laking something, I just can't figure it out. Thanks for the great recipe to use in our homemade ice cream.

Rocky Road Ice Cream

This ice cream was so good. I even made it lighter using Fat free sweetened cond. milk, 1/2 & 1/2 for the heavy cream and Fat free canned milk for the light cream and it tasted so rich. Used almonds instead of pecans because that is what I had. Let sit in freezer 24 hrs to harden. Very Chocolaty. Yum!

Big Guy Strawberry Pie

I have never given any recipe on here a rating this low. The crust did not stay together and you couldn't even really taste it. That is if you could get it out of the pan in one piece!I gave 2 stars because the pie looked wonderful. The strawberries were excellent, but nothing worth trying again. will keep looking for a better recipe.

Creamy Chicken and Rice

We have been making this for years. My kids request it all the time. It is high in fat, so I substitute FF milk, red. fat cheese, FF sour cream, and my original recipe that I use calls for 1/2 c, butter, divided, not 3/4 c. Which would be way too much. We have also used brown rice before which is yummy too.

Mound Bars

We loved these!! I changed a few things after reading a few reviews though. I cut the crust ingredients in half, but kept the filling the same and used an 8x8 pan. So, I doubled the filling. It took a little longer to bake that way though. After they came out of the oven, I sprinkled choc. chips on it and put it back in the warm oven to melt them and then spread them around. We also couldn't wait until they cooled, so we put them in the freezer for about 20 minutes. Yummy!!

German Pancake

We just had this for breakfast and it was great. I wasn't going to make the syrup because we had just gotten 'real' maple syrup, but decided to make it anyway. I am so glad I did. I can see myself pouring it over ice cream or something. Yummy! I also added 2 T. sugar to the pancake and 1 t. vanilla. Even my kids (11,9,6 & 2) who don't really care for pancakes loved this. Thanks.

Tomato Chicken Parmesan

This is a great recipe. We have made it 5 or 6 times in the last 2 months. My family just loves it. There is enough bread crumb mixture to do 9 or 10 chicken breasts. I also use mozzarella cheese instead and it turns out great. We serve this with either fettucine or thin spaghetti and a green salad. YUMMY!
