Chewy Chocolate Chip Oatmeal Cookies

I just finished making a batch of these cookies and they turned out beautifully. They stayed almost the same shape after baking as they did raw on the cookie sheet. For those having problems with flat cookies, make sure you do not use melted butter or a butter substitute that contains water as this will make your cookies spread. In trying to make a healthier cookie I used 1/2c crunchy unsalted peanut butter and substituted 3/4c unbleached flour and 3/4c oat flour (you can find this in the organic section of your store)for the regular white flour. I omitted the white sugar and used all brown. This made a not too sweet cookie. Very good.

Black Bean and Corn Salad II

Delicious! I only made half a batch to try it out and wished that I had made the whole recipe. This was awesome. I had to stop myself from eating it before I put it in the fridge! I used a little freshly ground black pepper in the marinade also. I will definitely be making this often.

Homemade Focaccia Bread

This was my first attempt at making Focaccia and it turned out very well. I didn't proof the yeast the first time and it still rose nicely, but I always proof it first now. This is a very easy recipe to make. I only have a hand mixer and can still pull it off. The batter sticks to the beaters a little bit but I just pull it off-no problem. I dont always use all of the additional 3/4 cup of flour. It depends how the initial batter turns out. I am not a big fan of rosemary so I use italian seasoning, garlic powder and a little kosher salt. Delicious!

Spicy Three Pepper Hummus

I just made this recipe today and it is wonderful! A nice garlicky, spicy bite to it. I used the pepper, cayenne and oregano in amounts to suit my taste. I also made mine in a food processor and needed a little more liquid to blend it properly. I had saved the liquid from the beans just in case I needed it, although water would have been fine. This recipe is definitely a keeper.
