Lemon Zucchini Bread

I was a bit disappointed after reading the reviews. I thought the lemon actually detracted from the overall taste of the zucchini bread. The texture was very good and moist, though.

Chef John's Blueberry Muffins

These were okay but not exceptional - the consistency was less like a muffin and more like a cupcake. The taste was good and we enjoyed the extra blueberries but I probably won't make this recipe again.

Peanut Butter Bars I

These were excellent! I followed the recipe with NO VARIATIONS the first time I made it. They definitely have to be completely chilled when cut into squares. I cut the batch at all at one time, then used a pancake turner to carefully lift them out of the pan. I am getting ready to make them again and will use a small amount of pan spray on the bottom of the pan this time. Enjoy!

Roast Sticky Chicken-Rotisserie Style

This was excellent - it was a great combination of seasonings. I would imagine you can use this slow cooking method for any seasoning combo. My one caveat is to be careful about the 5 hour timing. The chicken I just roasted was 5.5 lbs and luckily I checked it at 4 1/2 hrs, because it was more than done (but fortunately not dried out yet). Depending on how "fast" your oven is, it would be good to start checking the internal temperature earlier than 5 hours. I will definitely make this recipe again.

I made this dish pretty much as written and it was quite good. However, my family agreed that when I make it again, I would reduce the amount of rice to maybe three cups and increase the amount of meat. I can see also making this with beef. The seasoning combination was excellent.
