Savory Kale, Cannellini Bean, and Potato Soup
I made some changes, mostly because I didn't have everything in the kitchen. Subbed garbanzo beans for the white beans, which ended up giving some nice texture. I had parsnips (yum!) instead of carrots, so I added a can of tomatoes for the color. And because tomatoes make everything tasty. Subbed a bay leaf because my sage plant died. :( Didn't have chicken broth so instead I used water with a couple tablespoons of soy sauce and a dash of Worcestershire. Kept the wine in and I'm so glad - it added a nice depth and sharpness to the soup. This cooked up quickly and was a beautiful and delicious soup for a chilly, rainy winter evening. Nice and forgiving recipe - one to keep and play around with depending on what's in your fridge.

Belgian Molasses Bread
I don't have a bread machine, so I proofed the yeast in the water, then added molasses, butter and warm milk. Used my kitchenaid mixer to mix in flour and then knead. I'd doubled the recipe, so I let it rise once, then punched down and separated into the two loaves and let rerise, then baked at 350 for about 35 minutes. Lovely color, nice crust and wonderul texture, but it seems to be missing something. I might try adding some oatmeal or wheat germ next time to jazz it up a little.

Coconut Tofu Keema
Very yummy! It makes a lot - I halved it and still ended up with full belly and plenty of leftovers. I had green chile paste instead of the red, but it was still quite flavorful, as I used hot chili powder and kept the spice level medium-high. Only had 1 small can of tomato sauce, added two fresh tomatos diced instead. Used lite coconut milk, added in some chopped mushrooms on whim. A bit lighter than Indian fare I have when eating out, and very flavorful.
