Lemon Orzo Primavera

This recipe is really good! I omitted the carrots the first time I made it and used chicken broth instead of vegetable but otherwise stayed on track with the recipe. I've made it again without any of the veggies and that was also really good! Definitely a keeper!

Baked Teriyaki Chicken

The sauce turned out really great! I didn't bake the chicken, I cut up small pieces and sauteed it in a nonstick pan. After the chicken was cooked, I added about 2 tablespoons of the sauce and let it cook down a bit and used the rest of the sauce to top the chicken and rice on our plates. This is a keeper!

Thai Red Chicken Curry

This curry was good but definitely lacking flavor. The light coconut milk makes it a bit runny so perhaps next time I'll add more cornstarch and add extra curry and crushed red pepper to give it more of a kick. Overall easy to make.

Light Linguine Carbonara

I used whole wheat linguine and didn't realize I was out of crushed red pepper but it still turned out good. I feel like the sauce to pasta ratio was a bit off so next time I will use more evaporated milk and a tad more Parmesan cheese. Definitely a keeper.

Florentine Stuffed Chicken

Yum! This was delicious! I made a few modifications. I used boneless skinless chicken breast and marinated it in italian dressing for 30 min. I sauteed the onion and used marinated mozzarella from Trader Joe's as well as fresh spinach. I seasoned the mixture and the chicken with a little garlic salt and pepper. No leftovers tonight!

Spinach Lentil Soup

As is this recipe is a 3 star recipe. Definitely use more chicken broth than the recipe calls and add garlic. I used brown rice instead of white. I also think it could also use more lentils for a little more substance.

King Ranch Chicken Casserole III

This is a great recipe, thank you! I sautéed the onions, garlic and peppers in a little of the chicken broth and mexican chili powder as well as cayenne and black pepper. Also added the chili powder, cayenne, pepper and cumin to the soup mixture with only a cup of the chicken broth. I substituted the corn tortillas for chips and it worked out perfect! Definitely let it sit for a couple of minutes. Even better the 2nd day!!!

Slow-Cooker Chicken Tortilla Soup

Awesome recipe! I have made it twice on the stove instead of in the crockpot. I use rotisserie chicken and a lot more chili powder and cumin than the recipe calls for. Definitely sub the chicken broth for the water and add black beans. I also used diced tomatoes with jalapeños to make it a little spicier. Thanks for the great recipe!!!

Sour Cream Chicken Paprika

This was surprisingly good! I grilled the chicken on the Griddler with a little seasoning then added it to the broth mixture. I also added garlic and pepper to the broth. Instead of flour I used cornstarch - I had no issues with the sauce thickening! Definitely a keeper.

Baked Corn Casserole

My boyfriend and I absolutely love this corn casserole! I use the 1/3 less fat cream cheese and it turns out perfect every time. Takes a little longer to cook than the recipe calls for.

Black Pepper Beef and Cabbage Stir Fry

I also used top sirloin cut into strips, however I marinated the beef in schewan sauce and a dash of chili garlic sauce. I added an onion and snap peas and found this dish to be very good. I like my food spicy, so I added more chili garlic sauce to my plate. Will make again.

Mexican Chicken Corn Chowder

Great recipe! I changed a few things... 3 cubes of chicken bouillon, 2 cups of water, fat free half & half, half frozen corn, half cream-sytle corn, and a can of rotel instead of a tomato. I forgot to add the diced green chiles, but it still has a great flavor! I also boiled my chicken then shredded it. Thanks for the recipe!
