A disabled and VERY PROUD MOM of three great kids. Cooking for others and watching them enjoy it was what kept me from going insane during the five years I had esophageal cancer and lived with a feeding tube. Now I can enjoy the fruits of my passion too making it even more fun!
My favorite things to cook
I started off with baking and at first it was mainly muffins and cookies. I gradually made the next step to cakes and breads and loaves. Then came my introduction to real mealtime cooking. I was surprised at how natural it felt and how I seemed to "just know" what spices went well with which seasonings. I love cooking everything right from "scratch". No mixes or seasoning packets for me. From turkey soup and chicken stew to poached salmon and quiche Lorraine. My cooking ranges from hearty family fare to gourmet luncheons or dinners but the one thing I cook daily is homemade lunches for my kids lunch boxes!!
My favorite family cooking traditions
As a child I have many memories of making Christmas cookies with my mom and sister. We had so much fun together year after year making those cookies. I have tried to keep not only the tradition of making the cookies but the tradition of the fun we had together and the importance of keeping that tradition going on when my children have kids of their own.
My cooking triumphs
For my youngest sons birthday last year I made up a recipie so good Duncan Hines published it on their baking website!!! I made two tone dual flavour cupcakes. They were chocolate on one half and vanilla confetti on the other.....split right down the centre and frosted the same way but opposite coloured icing to each half of the cupcake. They were awesome!
My cooking tragedies
The year I tried to roast a 37 pound turkey in a 28" oven only to have the top element burn out.
