Baked Kale Chips

These were awesome and super simple. I brought some to my sister who is a raw eater and buys kale chips at WF's religiously. She is going to make a batch in her dehydrator - since that would be the "raw" way to make them.

Orange Chicken Stir Fry

This was really bad. I'm glad I didn't put in the chicken I got at Whole Foods. I added some freshly grated ginger as someone else recommended. I sauteed brocolli and the mung beans - it was completely inedible.

Delicious Ham and Potato Soup

Bland. I even sauteed the onion and celery. Used chicken broth and ham steak and couldn't add enough salt and pepper to flavor it. My DH said "you need a pound of cheese in this" as it seems others did. Sorry, big disappointment for me.

Slow Cooker Beef Stew I

We wanted to follow the recipe pretty much exactly to see how it would come out, so for ease we would give it a 5, as for flavor - it's about a 3.

Tea Biscuits

My husband made these today. He grew up with them and he said they taste exactly the same. He used butter (unsalted) instead of crisco. We had them with beef stew he made from this website yesterday. Wonderful together - biscuits and beef stew! I'm going to make some flavored butter (honey and butter) to go with his next batch.

Southwestern Egg Rolls

These were very good. Used flour tortillas and I baked them at 400 degrees for about 25 minutes until they were brown and extremely crispy. Who needs deep fried when baking works. Just served with sour cream but will work on what to serve it with - so many options.

Amy's Cilantro Cream Sauce

This was awesome. Couldn't find tomatilla so I used Mrs. Refinos green salsa. It is very spicy but when you eat it with whatever, chicken, cut up veggies, it cools it down. The hubby flipped over it, as did I. Yowza. Thanks for the recipe Amy.

Chocolate Eclair Dessert

I made this for an office party and it was a huge hit. I used one pkg cream cheese pudding and one package of french vanilla. Definitely needs to be made the night before so the graham crackers get soft. I also used skim milk for the pudding. It tasted like Boston Cream pie. Everyone liked it.

Barbequed Marinated Flank Steak

I marinated for a few days b/c I was too busy to cook it, but it was great. I did add a few cloves of fresh garlic as mentioned by others. 10-12 minutes of the grill and it was perfect. Will definitely do again, the hubby loved it as well. Oh ya, didn't use blender, just mixed together it in a big plastic (pan sized) container with lid and kept it in there for the few days.

Lemon Mushroom Herb Chicken

I made this and yes way too much flour, I used 3/4 and I still had some leftover but as recommended by others, I put some in the sauce at the end to thicken. My hubby thought the sauce looked heavy but when he tasted it he said I'll take some for lunch too. I will make this again. I added fresh mushrooms too, for eye appeal besides that, kept everything the same.

Creamy Dill Cucumber Toasties

I've made these twice now and people do seem to love them. I just made them for Easter and people were trying to figure out what was in them. I felt they didn't need to know how simple they were, so I just let them keep guessing. If you put a little fresh dill on top of cukes at the end, they look like they were catered.

Garlic Chicken

I made this twice now. I also used seasoned breadcrumbs, just what I had hand. A little tip, first time I cooked in a roasting pan, didn't crisp all that well so I broiled it at the end. Next time used "shallow" pan, which recipe suggested, viola, big difference. Nice and crispy. I also pounded the chicken and only cooked for 20 minutes.
