Zucchini Patties

I used a little more oil to shallow fry them, but they were delish! Even got a thumb sideways from my picky 13 year old (which is like 2 thumbs up for anything made out of vegetables). The only problem was that I ate too many!

Banana Crumb Muffins

simple to make with ingredients you almost always have on hand. I added an extra banana because I had 4 over-ripe ones and it was moist and delicious. My 5 year old son helped make them...so easy. Oh, I also made 12, not 10...they would've been too big.

Pumpkin Chocolate Chip Cookies I

I made a few subs. I used 1/2 brown sugar 1/2 white, 1/2 brown flour and 1/2 white and I didn't have any nutmeg so I added 1/4 tsp ground cloves and 1/2 tsp ginger. My son's friend said they were the best cookies he's ever had (although, they are quite possibly the only fresh out of the oven cookies he has ever been served) and his other friend gobbled up 4 in the blink of an eye.

Creamy Dill Dip II

a very easy and versatile dip. My husband enjoyed it on veggies, chips and baked potato. You do need to add more dill though. I think I'll try plain greek yogurt instead of the sour cream next time and a smidge less cream cheese since greek yogurt is thicker. It will be healthier that way an probably equally delicious.

Soft Chocolate Chip Cookies II

Easy and yummy recipe. I would have given it 5 stars but I made 30 cookies yesterday (I guess I made mine smaller) and there are still 4 in the container that my 3 boys have not eaten yet, so they are not 5 star worthy. I did substitute 1/2 cup of mini m & m's for the chips and I think next time I will try a smidge less white sugar. They are sweet! Good with a cup of coffee though.

Cream of Asparagus Soup I

I used 2 tbsp butter and 2 of olive oil instead of margarine, only 1/2 cup of cream and vegetable broth instead of chicken broth. It was good though. Even my picky 7-year old carnivore didn't mind eating it. I think you could leave out the cream entirely if you wanted it to be lactose free.

Cherry Snowballs

I made these much smaller then the recipe called for and the batch made 32, next time I will make them even smaller. My husband thought they were too messy for 2 or 3 bites and I should try to make them bite size. I agree, will try. Plus, I think they will have more flavour if they are smaller because you would taste the cherry with each bite. I divided my batch into 3; made 1 plain, 1 pecan and 1 with chopped up white chocolate chips. The husband and kids liked the chocolate ones best and I liked the pecan ones, except you cannot send them to a "nut-free" school :( Definately alot of work, but look so nice on a cookie tray it is worth it. I also tried adding cherry juice to the coconut and/or icing for differentiate between the different flavours. The plain white ones looked the nicest.

Hungarian Mushroom Soup

I loved this soup!I cut back on the parsley a bit and next time I might try cutting back on the dill just a smidge too. The main reason I gave it 4 stars instead of 5 is because the servings are off. There is no way this makes 6 servings. I would say 3 to 4 servings tops. I am craving it now!

Butter Chickpea Curry

A little bland for my liking but the kids actually tried it and cleaned their plates and agreed to take some leftovers in their school lunch. I used coconut milk instead of cream, because I thought it would give it a nicer flavour. I think next time I will use canned tomatoes instead of soup...there is something I don't like about cooking with canned soup. I will make it again though.

Delicious Black Bean Burritos

For lack of ingrediants I had to change things a little bit. I used chipotle chili powder instead of jalapenos, which I think just gave it a different flavour, not necessarily better or worse. I added a bit of shredded cheddar. My hubby liked them. I had extra filling so I spread it out on tortillas and made pinwheels the next day. (roll, slice, then bake at 375 C for 10 mins)

Chocolate Truffle Cookies

So easy to make, my six-year-old practically did it all himself. We also rolled them in powdered sugar and I drew a heart shape in vanilla icing, which made them a little too sweet. They were delicious, a hit with the grade one class we served them to. Only four stars because my husband (the junkfood junkie of the house) didn't like them.

Quick, easy, nutritious and cheap. Everything a busy working, hockey momma needs. I did not have fresh ginger so I had to sub about 1/4 tsp ground, otherwise it was great!

Honey Glazed Pork Tenderloin

This was ok. I served it when i had last minute company and everyone seemed to eat it, some people had seconds, but nobody really complimented it. I will make it again for my husband and son because one of my sons ate it well and it was super easy. (I am a vegetarian myself and prefer not to handle the meat too much, which is why I chose this one...no searing required)
