Spicy Sausage Quiche

I made this for work yesterday and everyone LOVED it! I took another reviewer's advice and instead of the peppers and chilis, I substituted a can of rotelle tomatoes with chilis. I also used spicy sausage. This is a GREAT breakfast casserole. Everyone will be wanting the recipe!

Hummingbird

This was pretty good, except it's extremely difficult to find rum cream in the US. We get ours when we travel to Canada. (Sangster's is exported there) I haven't seen any in the midwest yet. This recipe did remind me of Negril though, very yummy!

Praline Sweet Potatoes

I made this for Thanksgiving and have had to make it several times since. This is the best sweet potato casserole recipe I've ever come across! It's very sweet, but still retains the flavor of sweet potatos. I used canned sweet potatos once and it was still just as yummy. (I used canned sweet potatoes with NO syrup) I also cooked it a bit longer because I used a smaller, deeper dish.

Slow-Cooker Chicken Tortilla Soup

This was great! I used only 1/2 tsp of cumin and chili powder so it wouldn't be too hot. And I threw in 2 whole chicken breasts and shredded them after they cooked. (the meat was so tender it just fell apart) My only change in the future will be to use tortilla chips instead of corn tortillas...it would be less work, same taste.

Nanaimo Bars I

I had problems galore with this recipe. The base crust I thought was a little thick. The instructions for the custard layer weren't clear so my custard never was completely mixed and was runny. I used the entire bar of chocolate but it just wasn't enough. Everytime I have had these in Canada, the entire top layer was chocolate. I may try this recipe again with some major tweaking. The one thing I can say is that even without the custard power, they DID taste just like Nanaimo bars.

Arroz con Pollo II

This was really good. Although, I did learn that the can of beer really should be something mild like Bud Light. I added Molston XXX that I already had on hand and it left too strong a flavor.
