Having been from NYC originally, I was looking for a recipe that really popped. La Bella Ferrara or Junior's type cheesecake. That's not what I got. I only left the heat on for 45 minutes vs. an hour and it was still a little too brown on the edges. I had two very small cracks, even with a water bath, but if the cake wasn't so brown it would have still looked nice. The texture was right on, but the flavor wasn't. Any good cheesecake I've ever had has had a slight twinge of some sort of citrus-like flavor and this lacked it. I'll probably try it again, but the recipe and cooking time will be tweaked a bit.
