Aloo Phujia

I really like this recipe. I make it fairly regularly and my husband loves it. The trick is to cook it over medium heat so the potatoes and onions don't burn. You have to cut the potatoes into fairly small pieces so that they cook quickly and evenly. It's so important to saute them uncovered first and then when you cover them for the last ten minutes, that is when they really soften up and steam. Don't lift the lid! If you have your burner at the right temp, they won't burn and they will come out perfectly. Sometimes I add frozen peas during the last few minutes of cooking time and I always serve this with basmati rice. My only complaint is that it makes my house smell like curry the next day! Otherwise it is great!

Cream Filled Cupcakes

These were great! The filling is delicious!! I used a cake mix for the cake and piped the filling in from the top. I do need to work on my filling technique a bit . . . think I used too small of a tip. I didn't remove any cake to fill them, just stuck the tip in and squeezed the filling in. Worked great, will work even better with a larger tip next time (this time I used a 10-worked pretty good but I like the filling so much that I wanted more in each cake). Used chocolate frosting and decorated the tops with leftover filling. Thanks!!

Onion Brie Pizza

Fantastic! Though I supposed I'm rating the idea more than this recipe specifically because I made quite a few changes. I used a pizza crust-homemade italian herb. I only used 2 large onions. I added a tiny pinch of cayenne to the onion while they were sauteeing. Not enough to make it spicy, just enough to give it a little extra background flavor. When the onions were done, I gave them a quick splash of balsamic vinegar and sauteed them a couple minutes more. Spread them on the pizza, topped with the brie, sprinkled on pine nuts and baked. When the pizza was done, I sprinkled a generous handful of italian parsley over the top. Served with roasted asparagus and we were in HEAVEN! YUM!

Chicken and Sun-Dried Tomato Bruschetta

5+++ My guests LOVED this!! I shredded a roasted chicken from the grocery store and mixed it with Balsamic & Basil salad dressing, some baby spinach leaves and sun dried tomatoes. Spooned it on top of toasted baguette slices and sprinkled it generously with feta cheese. I am vegetarian and didn't eat it but everyone else gobbled it up, including my hubby who tried to sneak as many as possible before my girlfriends came over! I will keep this one for sure-almost everyone asked for the recipe!

Curry Sauce

AWESOME! I put all the ingredients in my slow cooker, used veggie broth instead of water, added a few tablespoons of butter, and simmered all day. Didn't puree anything; the onions broke down on their own over time. A couple hours before dinner I quickly sauteed some cubed potatoes for a few minutes and then added them and a can of garbanzo beans. Let it simmer for a couple hours more and we had the perfect curry! It was SO GOOD-smelled amazing in the house while cooking and the taste was perfect. It was quite spicy but we like it that way. Served with basmati rice and naan. This will be a favorite and so easy and adaptable too! Thanks for the great recipe!

Suki's Spinach and Feta Pasta

I was not expecting to like this as much as I did. I chose it because it seems so healthy with all the veggies but the flavor is outstanding. I think it is the feta-it can be so strong but it adds such great tang to this pasta! I used a can of diced tomatoes and 1/2 package of frozen spinach in place of the fresh stuff. My husband raved! This is a definite keeper!!

Blueberry Muffins II

If you are looking for a healthy wholesome muffin, this is not it! But if you are looking for a treat-this is the one! Very sweet and cakelike! Between 2 adults and 1 3 yr old, we actually ate a dozen in one sitting. YUM! Didn't change anything!

Baked Ziti IV

Butter Snow Flakes

Truly excellent cookies! I didn't have orange zest so doubled the cinnamon and they are perfect! Can't wait to try them with the orange! Every oven is different of course, but I burned my first batch-7 mins is perfect in my oven, 12-15 was way too long to bake.

Cheesy Hash Brown Bake

Fantastic! I have made this so many times now, I often take it to my monthly mom's group and have also made it for family brunches, even as a side dish for a potluck dinner. So quick, easy, and delicious! I like to use 1 can cream of potato and 1 can cheddar cheese soup, seems to be the perfect mix. I always forget the parmesan and never notice-just cheddar works just fine too. I do cut the sour cream a bit, just so it's a little thicker. I love this for morning meetings-you can mix it up at night without thawing the potatoes first then let it sit in the fridge overnight before baking in the morning. Great recipe-both as written and if you want to play around with it. Thanks!!

Gobble Up Granola Snacks

The best thing about this recipe is how versatile it is! I followed the recommendation of others to sub honey for the corn syrup. Changed the cereal to what I had on hand and used regular oats (also because that is what I had). Added dried cranberries, dried raisins, and nuts. They were great and the kids love them. Great for lunches. I might try it with the corn syrup too, it will be a different flavor. Great recipe and fun to play around with-you can do so much with this one! Chocolate chips are next!

Banana Crumb Muffins

Excellent muffins! Great crumb topping. I added vanilla to the batter as others mentioned. I also used oil and applesauce for the butter (was short of butter) and also replaced some of the flour with whole wheat flour. They were perfect!!

Buttercream Icing

Perfect! I have had other recipes in the past that used either 100% shortening or 100% butter. I don't like the flavor of the 100% shortening and though the taste of 100% butter frosting is great, it just doesn't hold it's shape as well. Half butter, half shortening is perfect-good flavor with stability from the shortening. I did cut the sugar a bit-didn't need it all to get the texture/thickness I needed. Used about 3.5 cups. Sifted the sugar even though the recipe didn't say-didn't want lumps! This is the recipe I'll use from now on-tasted great, looked great, my daughter's birthday cake got rave reviews!

Corn Chowder I

I really like this chowder! I changed it quite a bit though so please forgive me! I didn't use bacon as we are vegetarian. Sauteed the onion in butter, added the potatoes (not pre-cooked) and sauteed a bit, added the flour and then added veggie broth. I let that simmer for a while until the potatoes were tender then added some half & half, a can of creamed corn, half a bag of frozen corn, salt & pepper. Let it cook awhile longer and mashed some of it with my potato masher right in the pot to get the thicker texture. It was really delicious topped with cheese! Great base recipe here, you can add or change what you like! Will definitely make again-easy, inexpensive, and very tasty. The kids loved it too!

Tortilla de Patata (Spanish Tortilla)

I guess I'm rating the version of this that I made rather than this specific recipe though mine's not too far off. I combined the suggestions of reviewers plus the other recipes for this on this site. I sauteed an onion until nearly carmelized, then added one red bell & one yellow bell. Sauteed until soft then added 5 yellow/yukon potatoes, sliced. Sauteed over medium heat, stirring often but keeping covered to steam potatoes. When they were done, I added 5 beaten eggs that had a splash of milk and a handful of cheddar cheese mixed in, let it set, flipped it, and let it finish. My flipping needs work-may put it under the broiler next time. It turned out fantastic! Had wonderful flavor, a nice light supper with fruit and we will make it often! Thanks for the recipe and all the suggestions!
