Fantastic! I have made this so many times now, I often take it to my monthly mom's group and have also made it for family brunches, even as a side dish for a potluck dinner. So quick, easy, and delicious! I like to use 1 can cream of potato and 1 can cheddar cheese soup, seems to be the perfect mix. I always forget the parmesan and never notice-just cheddar works just fine too. I do cut the sour cream a bit, just so it's a little thicker. I love this for morning meetings-you can mix it up at night without thawing the potatoes first then let it sit in the fridge overnight before baking in the morning.
