Portobello Mushroom Stroganoff

Reviewed: Sep. 27, 2007
I have made this twice now-it's awesome! I don't remove the mushrooms from the pan-I just add the broth in with them and boil to get really great mushroom flavor in the sauce. This has become a favorite!

Corn Chowder I

Reviewed: Apr. 8, 2009
I really like this chowder! I changed it quite a bit though so please forgive me! I didn't use bacon as we are vegetarian. Sauteed the onion in butter, added the potatoes (not pre-cooked) and sauteed a bit, added the flour and then added veggie broth. I let that simmer for a while until the potatoes were tender then added some half & half, a can of creamed corn, half a bag of frozen corn, salt & pepper. Let it cook awhile longer and mashed some of it with my potato masher right in the pot to get the thicker texture. It was really delicious topped with cheese! Great base recipe here, you can add or change what you like! Will definitely make again-easy, inexpensive, and very tasty. The kids loved it too!

Risotto with Sun-Dried Tomatoes and Mozzarella

Reviewed: Apr. 7, 2009
We really enjoyed this. I like the flavor of the sun dried tomatoes, love the idea of using the oil from the jar. I cut the cheese back a bit and added white wine before starting the broth additions. I make a lot of risotto and didn't have any trouble cooking this-it cooked the same as any risotto, took about 25 minutes once I started adding the broth. The only thing I will say is that with the cheese and tomato oil it is quite rich, so be prepared! Very yummy and I'll definitely make it again!

Vegetarian Korma

Reviewed: Apr. 7, 2009
5++! This was wonderful! We loved it, even more than I expected to. With such simple ingredients and the only spice being curry powder I wasn't sure it would be flavorful enough but I was wrong! I realized after I was done that I forgot to add the nuts-oops! Results were still fantastic so didn't seem to matter. I used 1/2 & 1/2 instead of cream and just a red bell which I added after the potatoes to make sure it was nice and soft. This was a winner and I'll make it regularly!!

Cream Filled Cupcakes

Reviewed: Feb. 7, 2009
These were great! The filling is delicious!! I used a cake mix for the cake and piped the filling in from the top. I do need to work on my filling technique a bit . . . think I used too small of a tip. I didn't remove any cake to fill them, just stuck the tip in and squeezed the filling in. Worked great, will work even better with a larger tip next time (this time I used a 10-worked pretty good but I like the filling so much that I wanted more in each cake). Used chocolate frosting and decorated the tops with leftover filling. Thanks!!

Tortellini Minestrone

Reviewed: Jan. 28, 2009
Excellent! I made it vegetarian by leaving the sausage out and using veggie broth. I couldn't bring myself to use ketchup so used a small can of tomato sauce as others mentioned. I added kidney beans too. Love the tortellini! Everyone loved it and it made lots for leftovers too! Will definitely make again.

Oatmeal Carmelitas

Reviewed: Dec. 31, 2008
These are absolutely fantastic! I love them! I skipped the mixing of the flour into the caramel sauce and it still turned out great-I just drizzled the sauce over the top. Yum and a new favorite!!

Tex-Mex Quinoa Salad

Reviewed: Oct. 13, 2008
LOVE this! I used black beans instead of garbanzo and didn't hold back with the cheese . . . used the whole package! I was short on quinoa so used 1/2 quinoa and 1/2 couscous and it was still great. Will make it regularly!

Red Bean Salad with Feta and Peppers

Reviewed: Aug. 24, 2008
Great salad and very adaptable to what you have on hand! I didn't use cabbage as I didn't have it. Used both a red and yellow bell pepper and used a balsamic dressing instead of the lemon (just because I didn't have any lemons and had to improvise). The best part is the feta which I put on top of the salad-it's what makes the salad perfect. I served it over a bed of chopped romaine lettuce and it was fantastic-absolutely delicious; can't wait for lunch tomorrow!!

Loved it! I used the freshest tomatoes and let it sit all day. Served it on top of focaccia bread with a slice of fresh mozzarella. Delicious!

Garlic Onion Focaccia

Reviewed: Aug. 17, 2008
Fantastic! I added a teaspoon of italian herbs to the dough. When baking I added the onions & parmesan cheese halfway through the bake time so they would get too done. It was so good! I served it with the Alla Checca recipe from this site for an amazing appetizer (just like CPK!)

Southwestern Egg Rolls

Reviewed: Aug. 15, 2008
10 stars if I could!! I used the mini wonton wrappers and made bite size ones. I made these vegetarian as well-added extra beans to replace the meat. They were SO GOOD! I fried them too-and I really recommend it. I know it's fattening but so worth it sometimes! This is a really impressive appetizer (especially when served with Amy's Cilantro Cream Sauce from this site) that I'll be making again and again! Thank you thank you!!

Amy's Cilantro Cream Sauce

Reviewed: Aug. 15, 2008
YUM!! I too served this with the Southwest Egg Rolls and it was a perfect match. There was a lot leftover though-I dipped everything I could find into it! Chips, veggies, tortillas, etc. The only slight complaint is that it was a bit too salty but that is easily rectified by cutting back on the salt next time. Wonderful!

Taco Dip

Reviewed: Aug. 15, 2008
A hit! I used only 2 cans of beans, added a thin layer of salsa with lots of small diced avocado mixed in, then topped with sour cream, shredded iceberg lettuce, then cheese. I forgot to mix in the taco seasoning to the sour cream but it was still awesome. I think the lettuce gives it such a fresh taste. Everyone loved it at our mountain weekend-it ended up being our lunch cause we couldn't stop eating it!

Easy Chicken Satay

Reviewed: Aug. 15, 2011
This got rave reviews!! I didn't eat it as I am vegetarian but I made it as a special treat for my non-veggie husband and family. It was inhaled! I was complimented especially on the sauce. I did add some chili flakes to that and some ginger to the marinade. Cooked them on the indoor grill with good results but I know they would be even better on the BBQ. Will definitely make again, everyone seemed to love them! Thanks!!

Perfect! Subbed in whole wheat flour for a little less than half the flour. Added a splash of vanilla too. Made mini muffins and they were GREAT!

Brunch Strata

Reviewed: May 11, 2008
5++++. This was fantastic!! Made for Mother's Day brunch and everyone loved it. Most people had seconds and I was asked several times how I made it. I made it vegetarian and used tons of veggies-onion, garlic, mushrooms, red bells, yellow bells, asparagus and zucchini. I used baguette for the bread. At first when I added the eggs to the cream cheese mixture, it didn't look so good (kind of looked curdled) but I kept beating and it smoothed out. I will make this again and again-a nicer egg casserole and so adaptable as far as ingredients go. Thank you for a new favorite recipe-this is seriously one of the best things I have made in good while!

Blueberry Bread I

Reviewed: Apr. 28, 2008
This is exactly what I was looking for!! It is definitely NOT a cake type bread, which is why I chose it. I used butter instead of oil and replaced 1/3 of the flour with whole wheat. I upped the berries to 1 1/2 cups and didn't use nuts. It did take an extra 15 minutes to back (75 mins total) but was totally worth the wait! Awesome on its own but great toasted with butter, cream cheese or even peanut butter. Thanks! I'll will definitely make this again!!

Mom's Brown Gravy

Great idea! I sauteed a small fresh onion in the butter, then used a vegetarian broth base and water for the liquid. Great! Served with veggie sausages and mashed potatoes-yummy!

Onion Brie Pizza

Reviewed: Apr. 10, 2008
Fantastic! Though I supposed I'm rating the idea more than this recipe specifically because I made quite a few changes. I used a pizza crust-homemade italian herb. I only used 2 large onions. I added a tiny pinch of cayenne to the onion while they were sauteeing. Not enough to make it spicy, just enough to give it a little extra background flavor. When the onions were done, I gave them a quick splash of balsamic vinegar and sauteed them a couple minutes more. Spread them on the pizza, topped with the brie, sprinkled on pine nuts and baked. When the pizza was done, I sprinkled a generous handful of italian parsley over the top. Served with roasted asparagus and we were in HEAVEN! YUM!
