Lasagna Alfredo Roll Ups

We loved this! I made a couple of changes based on reviews-I didn't put the egg in the filling and added a small handful of mozzarella instead. I also used fresh sauces from the refrigerated section-a small tub of alfredo and a large roasted garlic tomato. I spread half the alfredo on the bottom, the other half on top and spooned the tomato over the top. YUM! It looked very pretty and held together very well. I will make this again!

Mexican Vegetable Rice

This has become one of my fast weeknight recipes. My husband loves it! I often substitute canned diced tomatoes and sometimes forget the green onions and it is still great. I usually serve it with diced fresh mexican cheese and tortillas and turn it into a taco/burrito of sorts. Great to add cooked chicken or beans as well. Don't skimp on the cayenne!

Zesty Taco Casserole

This was great! I made it almost exactly as the recipe indicated-I am not a huge cottage cheese fan so used 1/2 cottage cheese and 1/2 cheddar cheese instead. I made this about a month ago and it made a HUGE amount of food so I froze half of it before topping with the cheese and chips. We just ate it last night and it freezes really well! I served it with with tortillas, sliced avocados, and sour cream and it was fantastic!

Hot Artichoke Dip

This was SO good! I too used jalapeno instead of pimento. I served it with toasted baguette as an appetizer before a pasta meal. I had about half of the dip leftover so a few days later, I used it on a pizza crust, topped with mozzarella cheese and fresh tomato slices. It was fabulous! I have thought of many other uses already-pasta sauce, chicken topper, sandwich filling for pita bread-I could go on and on! Thanks for the great recipe-an instant favorite!

Authentic Mexican Enchiladas

This was great! It's like an enchilada salad-perfect for spring and summer when regular (American) enchiladas are too heavy and hot. I use the Red Enchilada Sauce recipe from this site and change the assembly process a bit. I simply fry the tortillas (without first dipping in sauce)then place a little of the heated sauce on a plate, roll the cheese into the tortillas and place on the plate, and then top with more sauce and the rest of ingredients as indicated. Frying with the sauce was too splattery for me (I'm not that talented!) but this way I am able to capture the flavors and it is very easy. I love it! I added diced avocado the 2nd time I made it. YUM! This is now my favorite way to eat enchiladas-so fresh tasting!

Aloo Phujia

I really like this recipe. I make it fairly regularly and my husband loves it. The trick is to cook it over medium heat so the potatoes and onions don't burn. You have to cut the potatoes into fairly small pieces so that they cook quickly and evenly. It's so important to saute them uncovered first and then when you cover them for the last ten minutes, that is when they really soften up and steam. Don't lift the lid! If you have your burner at the right temp, they won't burn and they will come out perfectly. Sometimes I add frozen peas during the last few minutes of cooking time and I always serve this with basmati rice. My only complaint is that it makes my house smell like curry the next day! Otherwise it is great!

This was just okay for me. My husband really like it though. It was a little too tangy-I prefer some heat in my Indian dishes. I much prefer Aloo Phujia from this site because it is a lot spicier.

Nectarine Pie

I really liked this pie! I was being really lazy, so I didn't make my own crust (used a frozen one) and didn't even peel the nectarines! I added an extra nectarine (mine were a little small) and used vanilla extract instead of almond. I dotted the top with a little bit of butter (about 1 Tbs total) for some added richness. It was fantastic! A really easy pie for a homemade pie taste without lots of work! And I ended up loving the color that the skins gave to the pie. Thanks Vicki!

Greek Pasta with Tomatoes and White Beans

A good basic pasta recipe-very healthy and superfast for an easy weeknight meal. I added garlic and some italian seasoning and I used frozen spinach but otherwise followed the recipe exactly. I will definitely make it again-loved how quick it came together!

Black Bean Pizza

This was good, healthy and very fast to make for a weeknight. I felt it could use something though-maybe some chili powder added to the bean mixture? A sprinkle of green onions on top after it comes out of the oven would also be nice. I will make it again with these additions to make it more of a chili type topping but it is also good as is!

Black Beans and Rice

This was the perfect thing for us! I am vegetarian and my husband is not-I cooked sausages on the side for him and he ate it all mixed together. I ate mine in corn tortillas with shredded cheese. Both ways were delicious. Even my super picky 3 yr old ate it without picking through it and asked for more (that alone is worth 5 stars!!). Besides being tasty, it was very easy, fast and cheap-a keeper!! I used one can of beans and added the spices in when I added the broth so they could cook into the rice. Perfect and definitely going into the rotation!!

Hummus Pizza

I really liked the flavors of this a lot. Unfortunately, it burned . . . I think the temperature may have been too high. The edges were burned but the center was not cooked very well; and I only baked it for 12 mins. I think next time I'll cook it at 425. Otherwise, it was yummy-love the hummus idea. I used Roasted Garlic hummus, bell peppers and asparagus. I put sliced cooked sausage on half for my husband. Served with a fruit salad for an easy, quick and delicious meal! I'll definitely make it again-it's very adaptable to a variety of toppings as well as different hummus flavors too. Thanks!!

Baked Ziti IV

This was great! I used ground pork instead of sausage but otherwise followed the recipe exactly. It got rave reviews from everyone! Thanks for the great recipe and a slightly different baked ziti-I'll definitely make it again.

Blueberry Muffins II

If you are looking for a healthy wholesome muffin, this is not it! But if you are looking for a treat-this is the one! Very sweet and cakelike! Between 2 adults and 1 3 yr old, we actually ate a dozen in one sitting. YUM! Didn't change anything!

Zucchini Mediterranean Style

This was ok, not fabulous, but a good base recipe. It needed more flavor or something. I added some cumin which helped but I had a lot left over. I served it again over pasta instead of rice and added a Italian Seasoning Blend and it was tons better. I may try it again-it made a decent pasta sauce in the end.

Pasta and Peas

This was pretty good-it was easy, fast and fresh tasting. I used frozen peas as I don't like canned. For liquid, I used a couple of small ladel fulls of the pasta cooking water. After mixing it all together, I added black pepper and a couple of handfuls of parmesan cheese. It was pretty good-the basil and green onions gave it a fresh taste and my husband loves any pasta with peas in it. He added some previously cooked chicken to his and liked the addition. I think for a heavier dish, it would be good mixed with a white sauce. Overall I think it was pretty good, though as written, a bit bland. Plus the idea of the canned peas and their liquid making the sauce turned me off-frozen peas were great though! Thanks for the idea!!

Risotto with Tomato, Corn and Basil

Excellent! I changed this a bit and made mine in a more traditional way-I substituted vegetable broth for the milk (wasn't wild about the milk idea for some reason). I did everything else almost as indicated-didn't peel the tomato (too much work and not necessary!), added extra parmesan, and stirred in a pat of butter before serving. Topped with basil and more parmesan and it was great!! Very fresh tasting risotto because of the corn and basil-every last grain of rice was gone! Thanks!!
