Homemade Guacamole

Country Seed Bread

Really really good. To be honest, when it was mixing I didn't think I would like it-thought it would be too crunchy/seedy and it smelled too strong-but it was absolutely delicious! I used sunflower, flax, & sesame seeds and used bread machine to mix, let rise in loaf pan and baked in my oven at 340 for 28 mins (my oven runs hot though). Perfect. Made the BEST toast the next morning too! Thanks-a new favorite!

Silky and Creamy Wild Rice Soup

This was just ok for me. My husband said it deserves a 4 but I think I have to say 3. It didn't taste bad; it was just kind of boring. The flavor of the milk completely overpowered everything else. I love cream soups and I LOVE wild rice but I couldn't even really taste the flavor of the rice because the milk took over everything. I added carrots, garlic and mushrooms to the veggies at the beginning. If I were to make this again, I would replace half the milk with vegetable broth to cut the milk taste and add some flavor. Also agree that the salt quantity is too high-i did reduce that. As a side note, the leftover soup thickened up considerably and created kind of a creamy veggie rice-nice base/side for our leftover Thanksgiving turkey.

Paneer (Home Made)

Pretty good! The flavor was great but it didn't make as much as I hoped it would. Next time, I'll double the recipe. Also, it was very crumbly, didn't hold together when I cut it which made my Matar Paneer look not so pretty. But it tasted great! Maybe I need to work on my technique . . .

Curry Sauce

AWESOME! I put all the ingredients in my slow cooker, used veggie broth instead of water, added a few tablespoons of butter, and simmered all day. Didn't puree anything; the onions broke down on their own over time. A couple hours before dinner I quickly sauteed some cubed potatoes for a few minutes and then added them and a can of garbanzo beans. Let it simmer for a couple hours more and we had the perfect curry! It was SO GOOD-smelled amazing in the house while cooking and the taste was perfect. It was quite spicy but we like it that way. Served with basmati rice and naan. This will be a favorite and so easy and adaptable too! Thanks for the great recipe!

Curried Zucchini Soup

This was just ok for us. Tasted like watery zucchini and curry which is what is I guess but based on the reviews I was expecting something more. I was disappointed as I love zucchini and curry both but this was just not great. It was too thin; I added some cornstarch which helped a little. I also stirred in some sour cream to give it a more creamy flavor. I don't think I will make it again but for those who try it I would recommend adding a potato or something to give it more substance. Maybe some other veggies too? My husband liked it more than me but it didn't get raves from anyone.

Roasted Winter Vegetable Soup

Very good-I used carrots, parsnips, rutabagas, potatoes, onions and garlic. The smell of the roasted veggies was amazing. The flavor was great but a little more subdued than I was hoping. Really good though!

Corn and Cheddar Chowder

This was really good. Very fresh tasting and I loved how easy it was too make. My only complaint was that I wish it had made more as there weren't any leftovers!! Next time, I might double the recipe. Thanks!

Baked Ziti Casserole

Pretty good-nice comfort food. It could use a little more flavor somehow though. I think next time I'll add some garlic or something to the sauce. We loved how cheesy it was though and it was great as leftovers for lunch the next day.

Roasted Vegetable Lasagna

Thank you for the awesome recipe! My in-laws loved this-it was great! The roasted veggies add the best flavor. I will definitely make this again; I may try to replace the ricotta with a bechamel sauce next time. I will definitely experiment with other veggies. This is my new favorite lasagna-everybody had seconds and I was asked for the recipe by my mother in law AND sister in law. A hit!!

Really good! Tasty, easy, quick and cheap-a real winner! I added a can of Rotel and some Mexican seasoning blend as the recipe was a touch bland as written (which is the only reason for the 4 star rating). With the additions, it was awesome! Served it in tortillas with cheese-yummy and healthy too! We'll be making this regularly. Thank you!

Avocado Tacos

Pretty good-it is like guacamole as taco filling so I added some Mexican cheese to make it more filling and I may add some beans or something next time. As is, I think it makes a better snack than meal. Very tasty though-thanks!!

No Bake Chocolate Oat Bars

These were not my favorite. Just ok-too sweet and the oats were too raw tasting for us. Most of it wasn't eaten-not usual for sweets in our house! It definitely gets points for being easy though but I probably won't make this again.

Oaty Cereal Bars

Pretty good! I simmered the sugar/honey mixture for a minute or so to make sure it became solid enough to hold the bars together. I also added some granola to the cereal. A great portable breakfast-very filling!

Portobello Mushroom Stroganoff

I have made this twice now-it's awesome! I don't remove the mushrooms from the pan-I just add the broth in with them and boil to get really great mushroom flavor in the sauce. This has become a favorite!

Zucchini Tomato Pie

This was ok. The idea is good and I think I'll play around with filling ideas. I used a previous reviewer's suggestion and followed the box for incredible pies for the crust. It was ok, good for a quick meal but just not something I would ever rave about.
