Soft Garlic Breadsticks

Reviewed: Aug. 17, 2008
These were pretty good-a nice accompaniment to our pasta. I think a lot of the flavors got lost in the bread though. Smelled great and the texture and taste was great.

Alla Checca

Loved it! I used the freshest tomatoes and let it sit all day. Served it on top of focaccia bread with a slice of fresh mozzarella. Delicious!

Garlic Onion Focaccia

Reviewed: Aug. 17, 2008
Fantastic! I added a teaspoon of italian herbs to the dough. When baking I added the onions & parmesan cheese halfway through the bake time so they would get too done. It was so good! I served it with the Alla Checca recipe from this site for an amazing appetizer (just like CPK!)

One Hundred Thousand Calorie Bars

Reviewed: Aug. 16, 2008
Delicious! Very very rich and great for satisfying chocolate and caramel cravings. 4 stars though as they just don't hold together well and therefore I couldn't make this for company or to take somewhere as they aren't solid/firm enough to hold and eat even after sitting for many hours. However, I will make them again . . . it will be awesome spooned when warm from the oven into bowls and topped with vanilla ice cream. That I could definitely serve to guests!

Southwestern Egg Rolls

Reviewed: Aug. 15, 2008
10 stars if I could!! I used the mini wonton wrappers and made bite size ones. I made these vegetarian as well-added extra beans to replace the meat. They were SO GOOD! I fried them too-and I really recommend it. I know it's fattening but so worth it sometimes! This is a really impressive appetizer (especially when served with Amy's Cilantro Cream Sauce from this site) that I'll be making again and again! Thank you thank you!!

Amy's Cilantro Cream Sauce

Reviewed: Aug. 15, 2008
YUM!! I too served this with the Southwest Egg Rolls and it was a perfect match. There was a lot leftover though-I dipped everything I could find into it! Chips, veggies, tortillas, etc. The only slight complaint is that it was a bit too salty but that is easily rectified by cutting back on the salt next time. Wonderful!

Taco Dip

Reviewed: Aug. 15, 2008
A hit! I used only 2 cans of beans, added a thin layer of salsa with lots of small diced avocado mixed in, then topped with sour cream, shredded iceberg lettuce, then cheese. I forgot to mix in the taco seasoning to the sour cream but it was still awesome. I think the lettuce gives it such a fresh taste. Everyone loved it at our mountain weekend-it ended up being our lunch cause we couldn't stop eating it!

Five Minute Ice Cream

Reviewed: Aug. 15, 2008
This was good and easy. Like other reviewers, I agree that there is way too much sugar as it was gritty. I will cut that back next time. I also agree to make is a couple of hours ahead of time and freeze it for better ice cream texture. The other thing is that I think the heavy cream was too much-a bit overpowering. Next time, I'll use half and half or cut back the amount. Thanks for a great technique and wonderful use of frozen fruit!

Tortilla de Patata (Spanish Tortilla)

Reviewed: Aug. 15, 2008
I guess I'm rating the version of this that I made rather than this specific recipe though mine's not too far off. I combined the suggestions of reviewers plus the other recipes for this on this site. I sauteed an onion until nearly carmelized, then added one red bell & one yellow bell. Sauteed until soft then added 5 yellow/yukon potatoes, sliced. Sauteed over medium heat, stirring often but keeping covered to steam potatoes. When they were done, I added 5 beaten eggs that had a splash of milk and a handful of cheddar cheese mixed in, let it set, flipped it, and let it finish. My flipping needs work-may put it under the broiler next time. It turned out fantastic! Had wonderful flavor, a nice light supper with fruit and we will make it often! Thanks for the recipe and all the suggestions!

Peanut Butter Bars I

Reviewed: Jul. 25, 2008
WOW!! These are fantastic! I made them as the recipe said, except followed the advice to melt the pb with the butter. I also put them in a smaller pan to make them thicker. Perfect! Love that you don't need to heat up the oven-perfect for Summer treats!! This is a new favorite-I can't wait to bring it someplace!

Perfect! Subbed in whole wheat flour for a little less than half the flour. Added a splash of vanilla too. Made mini muffins and they were GREAT!

Brunch Strata

Reviewed: May 11, 2008
5++++. This was fantastic!! Made for Mother's Day brunch and everyone loved it. Most people had seconds and I was asked several times how I made it. I made it vegetarian and used tons of veggies-onion, garlic, mushrooms, red bells, yellow bells, asparagus and zucchini. I used baguette for the bread. At first when I added the eggs to the cream cheese mixture, it didn't look so good (kind of looked curdled) but I kept beating and it smoothed out. I will make this again and again-a nicer egg casserole and so adaptable as far as ingredients go. Thank you for a new favorite recipe-this is seriously one of the best things I have made in good while!

Blueberry Bread I

Reviewed: Apr. 28, 2008
This is exactly what I was looking for!! It is definitely NOT a cake type bread, which is why I chose it. I used butter instead of oil and replaced 1/3 of the flour with whole wheat. I upped the berries to 1 1/2 cups and didn't use nuts. It did take an extra 15 minutes to back (75 mins total) but was totally worth the wait! Awesome on its own but great toasted with butter, cream cheese or even peanut butter. Thanks! I'll will definitely make this again!!

Great idea! I sauteed a small fresh onion in the butter, then used a vegetarian broth base and water for the liquid. Great! Served with veggie sausages and mashed potatoes-yummy!

Onion Brie Pizza

Reviewed: Apr. 10, 2008
Fantastic! Though I supposed I'm rating the idea more than this recipe specifically because I made quite a few changes. I used a pizza crust-homemade italian herb. I only used 2 large onions. I added a tiny pinch of cayenne to the onion while they were sauteeing. Not enough to make it spicy, just enough to give it a little extra background flavor. When the onions were done, I gave them a quick splash of balsamic vinegar and sauteed them a couple minutes more. Spread them on the pizza, topped with the brie, sprinkled on pine nuts and baked. When the pizza was done, I sprinkled a generous handful of italian parsley over the top. Served with roasted asparagus and we were in HEAVEN! YUM!

Creamy Spinach Tortellini

Reviewed: Apr. 10, 2008
This was good! I had some wonderful fresh spinach to use up and this was a great way to do it-sauteed it with the onion at the beginning. I used a family size package of tortellini, added more milk, and only used 1/2 package of cream cheese. It was plenty rich! The tomatoes did cut the richness a bit. I didn't add mushrooms-didn't have any. We enjoyed it and it was really fast and easy!

Quinoa and Black Beans

Reviewed: Apr. 8, 2008
This was great! Even my picky 4 yr old loved it! So healthy too. We had it in tortillas with cheese, avocado, salsa, sour cream-like a burrito filling. The leftover were great on lettuce with some cheese and salsa to make a salad. Will definitely make again!

Billy's Favorite Smoky Collard Greens

Reviewed: Apr. 8, 2008
Pretty good! I have never had or made collard greens before so was looking for a recipe. I know the ham/smoked flavor is traditional but it's not a favorite flavor of mine-I might leave it out next time. Husband loved it though!

Mexican Pasta

This was great! Used only one onion, and a red bell instead of green. Topped it with cheese, sour cream and green onions-yummy, easy, & cheap too!
