Slow Cooker Cream of Potato Soup

Great recipe, especially for something easy to throw together earlier in the day so it's ready when you need it. Didn't have leeks so used green onions. Also used regular milk as I didn't have evaporated milk. Mine was kind of salty but my potatoes were on the smaller side so that's probably why. Very good and will definitely make it again! Served it in homemade bread bowls and it was yummy!

Oat Applesauce Muffins

I get that these are supposed to be a healthy and nonfat muffin but they are very very bland. No flavor! I even added vanilla and cinnamon based on reviews but still these leave a lot to be desired. They are not sweet in the slightest and I think they need at least a little fat-some oil or butter. I'm hoping they improve when they sit a bit. I made them because I was out of butter and oil and needed something to have for the kids for breakfast and this fit the bill since it doesn't need any oil/butter. 2 stars because they are edible but I won't be giving them another try. One redeeming quality is that I like the flavor of the oats in them.

Grandma's Tomato Soup

Very good and easy soup! I used V8 and found I did need the sugar and salt. I originally left it out based on reviews but after tasting it, I added some in. I tripled the recipe and added an extra cup of water and cooked the noodles in the soup while it cooked. Was very good, and perfect for a speedy weeknight-we had cheesy toasted french bread on the side.

Mushroom Sauce

This is very good for a quick and easy weeknight dish. Used cream of mushroom soup to keep it vegetarian. Left out the bell peppers (didn't have any) and added extra mushrooms. Served over cheese ravioli and it was very good!

Apple Crisp IV

Great crisp!! I had a few apples to use up so gave this a try. It was fast, easy & delicious. I halved the recipes as I only had a few apples and it was perfect. I did leave the nutmeg out because it isn't a favorite flavor of mine but that is just personal preference. Thanks, I'll use this topping with other fruits too! Peaches, berries, pears, yum!!

Black Bean and Corn Quesadillas

These were great!! I couldn't bring myself to put the brown sugar in though . . . I'm sure it's great that way but at the last second when I was about to do it, I just couldn't-I like my savory food to be savory and I was worried it would be too sweet. I didn't miss it but I may try it sometime just to see the difference. Even without that though, these were great, easy, inexpensive and we all enjoyed them. I think they are probably divine cooked in butter as recommended but I too took the oven bake and broil route. I topped them with shredded iceberg lettuce, grape tomatoes, avocado, sour cream, & salsa. Delicious!!! I had some leftover filling which I ate on top of green lettuce blend today for lunch, topped with some cheese and used salsa as a dressing, it was so good! This is something I will definitely make again!

The Best Rolled Sugar Cookies

Excellent recipe for sugar cookies, especially if you want them to hold their shape. I used this to make cookie bouquets and the came out perfectly! I agree with others to up the sugar (I did heaping cups) and I loved the idea to roll with powdered sugar. Thanks!

Country Style Fried Potatoes

Awesome method for cooking breakfast potatoes! It's New Year's Day and we felt like a heavy greasy yummy breakfast to soak up the party from last night! I made these eggs and they were SO GOOD! I added an onion & red bell pepper and microwaved the potatoes for a few minutes before cooking to speed up the process. Used butter and oil to fry it (started with pepper and onions till soft then added potatoes and seasonings). They were so good, my husband pronounced them better than a restaurant. I will make these often!

Royal Icing II

This icing works perfect for gingerbread houses or cookies that you want to decorate and have them stay pretty as the icing firms up nicely like a candy coating and hardens well. But not so hard that you can't eat it. Flavor wise though, it's not as good as buttercream or something like that. It tastes like powdered sugar really and that's it. I was worried that they wouldn't taste very good because on its own it didn't have the best flavor when I tried it. But when I iced the cookies, they came out perfectly! Will use this again.

Easy OREO Truffles

WOW. All I can say is WOW. These are so good. Made them for a platter for my husband to take to work and received rave reviews. They were so good I'm making a 2nd batch for us for New Year's (before I start that diet!!). I found the dipping process a bit tricky but I put the truffles in the fridge until firm then used a fork and spoon to roll them in melted chocolate chips and it worked pretty well. They sure tasted great! Will think of a way to make them look a little prettier-I sprinkled the pile with colored sugar and I think melted white chocolate or powdered sugar or something would make them look nicer. But I love them as they are! UPDATE: The ones dipped in white chocolate were even better!!! And they looked prettier too!

Hamburger Buns

These are great and easy too! As a stand alone roll recipe, they aren't the best but as they are intended to be eaten (a hamburger bun) they are great! Nice and doughy, good dense texture, and a perfect accompaniment as they don't overpower the hamburger. I halved the recipe and made 6 good sized buns. They rose perfectly (though I did let them rise longer than 20 mins). I also subbed half whole wheat flour and half bread flour for the AP flour. A winner . . . quick, easy, tasty! Definitely better than store bought for a fraction of the price! We eat veggie burgers periodically for a convenient meal and they are not my favorite but these buns made me actually crave a veggie burger-thanks so much!

Toll House Crumbcake II

GREAT CAKE!! I loved it! So easy to make, delicious, rave reviews for it too. I will say that the 2 cups of chocolate chips for the topping is too much. I will double the rest of the topping ingredients next time and throw in a good handful of chocolate chips for the topping-maybe about 1/2 cup or so. The topping is awesome, it does not come out like a streusel crumb topping, it actually bakes into the top of the cake giving the top a sweet, crisp exterior and gives it that chocolate chip cookie flavor. Awesome! UPDATE: I have made this again and doubled the topping as I mentioned above . . . and have to say that I do not recommend doubling it-it was way too much that way-too sweet! The original amount is perfect.

Black Bean and Rice Enchiladas

Great! I normally prefer corn tortillas for enchiladas but this ended up being very much like the wet burritos I like from the Mexican restaurants. I cheated in the prep a bit-made Red Enchilada Sauce from this site, mixed a good amount into cooked brown rice and added the can of black beans. Filled the tortillas (added cheese inside too) and then poured the remaining sauce over the top. After baking, I served them topped with sour cream, avocado, cilantro, green onions & halved grape tomatoes. Delicious!!

Best Big, Fat, Chewy Chocolate Chip Cookie

These really are wonderful cookies. My only complaint is the listed baking time was too long. I shortened it to 14 mins as my oven runs hot but even that was too long and once cooled, the cookies were pretty hard. Next time I'll bake for 12 mins or so only. Flavor, taste and appearance of these cookies is awesome!!

Buttercream Icing

Perfect! I have had other recipes in the past that used either 100% shortening or 100% butter. I don't like the flavor of the 100% shortening and though the taste of 100% butter frosting is great, it just doesn't hold it's shape as well. Half butter, half shortening is perfect-good flavor with stability from the shortening. I did cut the sugar a bit-didn't need it all to get the texture/thickness I needed. Used about 3.5 cups. Sifted the sugar even though the recipe didn't say-didn't want lumps! This is the recipe I'll use from now on-tasted great, looked great, my daughter's birthday cake got rave reviews!

Beer Battered Fried Vegetables

This was fantastic batter! I used it to fry zucchini. Was absolutely delicious. I didn't let it sit for 3 hrs and I tried it with the egg/flour dip and without-didn't notice a difference so stuck with just dipping into the batter and frying. Only addition was some creole seasoning to spice it up. Came out perfect, great texture, nice and crisp. Will definitely make it again!

Indian Relish

This is a really great recipe. My husband LOVES relishes on sandwiches with cheese and has begged me to ALWAYS keep this one in the fridge for him. But he eats it faster than I can keep it made! Going to have to make a huge batch and try canning it. It's great over cream cheese too. I reduce the vinegar and sugar amounts to 3/4 cups each and have made this several times now. Thanks for making my husband think I'm amazing! He says it's better than any storebought, fancy relish or chutney that he's ever had! I too love it with the cream cheese and crackers, it's wonderful! (Though I have to admit that I'm not sure what makes it Indian . . . no matter, it's great!)

Zucchini Patties

These were pretty good but a little bland in flavor. Next time, I'll add more seasonings, maybe some additional cheeses. I will definitely use the potato flakes rather than bread crumbs and flour as I did this time. I think that will make the texture much better and the patties delicious!

Banana Crumb Muffins

Excellent muffins! Great crumb topping. I added vanilla to the batter as others mentioned. I also used oil and applesauce for the butter (was short of butter) and also replaced some of the flour with whole wheat flour. They were perfect!!
