White Beans and Peppers

This was good. I served it over toasted bread as kind of a bruschetta/open faced sandwich type of thing. It was good but I felt it needed more flavor or something. I like the idea of blending it up to make hummus though-that's great!

Delicious Black Bean Burritos

As written, this is just ok, probably a 3 star recipes really. Making additions as recommended in the top rated review (chili powder, cumin, rotel, etc) ups the flavor significantly and makes it a lot better. But even so, while it was fast and easy to make and tasted pretty good, it is wasn't something I would really rave about. A good quick weeknight meal though and I will use it again for that.

Tomato Vodka Sauce

Fantastic!! We loved this and I will definitely make it again. Added garlic-doesn't feel right to have pasta without garlic! Used crushed tomatoes and subbed 1/2 and 1/2 for the cream because that is what I had on hand. Also added a teaspoon of italian herbs with the simmering tomatoes. Fabulous result!!!

Italian Torte

This was great! I was asked for the recipe by 3 different people. Looked very pretty and tasted delicious. A caution, don't go overboard on the garlic, I started to add more but am so glad I didn't. Because it's raw a little goes a really long way. I did cut down the amount of pesto just a bit and make sure to chop the sun dried tomatoes really well. I will definitely make this again-easy, impressive and fantastic for a party since you can make it ahead of time!

Zucchini and Rice Casserole

I really loved this! Only reason I am giving 4 stars is because as written, there would definitely not be enough rice. I upped it to 2 cups cooked rice and it was perfect! Also, no need for all that butter and oil when sauteeing, I only used a small chunk of butter (about 2 1/2 T) and it was just fine. Save the fat/calories for something else! Overall, it was delicious and cheesy, served it as a main course with corn on the cob, salad and fruit. Great!

Cavatelli and Broccoli

If you make this as written you will be disappointed as it will essentially be plain pasta with broccoli and garlic. Definitely follow the advice of others and heavily salt your pasta water and add a ladelful or 2 to the mix when combining the broccoli and pasta. A pat of butter adds a little richness, definitely use more parmesan too! With the changes you'll have a nice quick and easy weeknight pasta dish.

Quick Coffee Cake

As written I can see that this cake would be dry . . . as others recommended, I upped the milk to 3/4 cup and the sugar to 2/3 cup. I mixed the butter with the other topping ingredients and raked it through the batter. This was a FANTASTIC cake, the cake itself was very moist and tasty, the topping perfect! 5 stars with these changes!!

Microwave Caramel Popcorn

I love this recipe, I've made it so many times now. I make it often when the kids have friends over or for our weekend getaways to the mountains, beach, etc. So easy, so quick, fast clean up, and soooo good! Everyone loves this popcorn-people assume that I bought it or did a very time consuming oven baking method. It just doesn't get any easier than this! I use 3 bags of popped butter flavor microwave popcorn and the only change I make is to reduce the amount of time I cook it in the bag to 45 seconds each time instead of 1 min 10 secs-my microwave probably runs hot but it would burn if I left it that long. GREAT recipe!!

Caponata Appetizer

I actually really liked this. I was surprised because I really hated the idea of using canned soup in caponata but I was trying to clean out the pantry and had a can of it so decided to try it. It turned out great. I did not serve it as an appetizer, I think it would have been too runny for that. I did toss it with penne pasta and topped it with parmesan cheese and it was great! I did need to add some salt to it once it got on the pasta. Those that don't like the idea of using soup . . . I think this would be great with regular diced tomatoes, canned or fresh too. UPDATE: I have made this again-pureed it in the blender and used it as a pasta sauce-it was 5 stars! Topped with a bit of parmesan, it made a great pasta dish, with rave reviews all around! Healthy too! I will definitely make it again that way. To make the sauce, I did add a bit of sea salt and cut the water to only 1 cup. Everything else I kept the same as listed in the recipe except for pureeing it at the end of the cooking time. Soooo good!

Zucchini Herb Casserole

This was just ok for me. I doubled the spices for more flavor and increased the rice to 1/2 cup as other reviewers recommended and I definitely think those are 2 necessary changes. And I reduced the cheese, another necessity. But I still didn't love it . . . honestly I think the herb combo just doesn't work well. The flavor seemed off somehow. If I were to try it again I think I would use different herbs and try to get a different flavor.

Fried Mozzarella Cheese Sticks

This was really great, they turned out perfectly! Based on other reviews, I put the mozzarella in the freezer for a bit before breading and frying but I won't do that in the future . . . some of them just didn't get all melty and soft in the middle. They were still great but just a bit firm in the middle. I will also add some extra salt to the breadcrumbs for extra flavor. Otherwise, these were fantastic and I loved them!!!

Gobble Up Granola Snacks

The best thing about this recipe is how versatile it is! I followed the recommendation of others to sub honey for the corn syrup. Changed the cereal to what I had on hand and used regular oats (also because that is what I had). Added dried cranberries, dried raisins, and nuts. They were great and the kids love them. Great for lunches. I might try it with the corn syrup too, it will be a different flavor. Great recipe and fun to play around with-you can do so much with this one! Chocolate chips are next!

Cheddar Cheese Bread

The flavor of this bread was great, loved the cheesiness. But the texture wasn't great. Don't know if I did something wrong. I made it the way I make all my bread-mixed/kneaded in the bread machine, formed into a loaf, rose, and baked in the oven. It rose nicely, looked and smelled great . . . but I had trouble getting it to fully cook in the middle. When it was finally done, the texture was very heavy and dense, chewy almost doughy in the middle. That said, I'm expecting that it will make pretty good toast today, seeing how dense it is. Maybe this is one that needs to bake in the machine. Or maybe the cheese just makes for a denser bread. Not sure-I liked the flavor enough to try it again at some point. I've baked a lot of bread and just am not sure what happened with this one!

Lemon Square Bars

YUM! I have made lemon bars before and they haven't turned out very well. These were fantastic! Followed the suggestions given by the most popular reviewer at top of the list below recipe and they were indeed perfect. I can't stop eating them! I have a tree full of lemons . . . dangerous!!

Raspberry Lemon Muffins

These were good muffins . . . but a little bland. I used plain yogurt (that's what the recipe called for and what I had in the fridge). I can see why flavored yogurt is recommended by reviewers as it is sweetened and provides more flavor. If you use plain yogurt, they are good but just kind of bland . . . need more sugar maybe! I used blueberries instead of raspberries because that's what I had and maybe next time I'll add vanilla. Nice texture to the muffins though, nice and moist!

Mom's Applesauce Pancakes

Good flavor to these pancakes, nice for something different. One complaint though . . . I had a lot of trouble cooking them! The outside browned really quick no matter now low the heat and the inside wouldn't be cooked. I managed to get them pretty well done over low heat in the end but they were tricky and the outsides did burn easily! Otherwise, they were tasty, just not sure how to fix the cooking problem.

Cheese Biscuits II

Really good! 10 stars because they don't use Bisquik which I never have and is always called for in biscuit recipes. Would actually give them 4.5 . . . I didn't add the peppers because of the kids but I think they would add a lot of flavor as they are a tad bland without. That's ok though, they were meant as an accompaniment and were perfect for that. I used butter instead of shortening (personal preference). They were fast, tasty, easy and very much enjoyed! I will definitely keep this recipe-it's a great recipe as is, but I can imagine adding herbs or different cheeses, etc. Thanks so much! I've been looking for a quick savory bread recipe for ages and this was really great!

Super Bowl Bread Bowls

These were good but like others, they did not rise tall at all and spread way out during the rise resulting in flat bread bowls. I still used them but they weren't ideal as they were so shallow I couldn't fit much soup in them. Might try again, think the recipe might need more flour maybe, Or less yeast.
