Vegetarian Chickpea Sandwich Filling

This was great!! I used green onions instead of regular onion but otherwise kept the recipe as written and it was fantastic! I served it in pita bread with lettuce & tomato. Easy & delicious! My beans didn't mash well with a fork so after a couple of tries I just squished them with my hands. I let it sit for a couple of hours in the fridge before eating and it was perfect! Thank you!

Easy Chicken Satay

This got rave reviews!! I didn't eat it as I am vegetarian but I made it as a special treat for my non-veggie husband and family. It was inhaled! I was complimented especially on the sauce. I did add some chili flakes to that and some ginger to the marinade. Cooked them on the indoor grill with good results but I know they would be even better on the BBQ. Will definitely make again, everyone seemed to love them! Thanks!!

Blueberry Crumb Bars

I have to say I was disappointed in how these turned out . . . especially considering all of the glowing reviews! The base was too flour-y for me, and a bit on the bland side. The filling was good but the topping was too flour-y in taste as well. I think adding oats or something would break up the texture a bit? Not sure but I just didn't have the same great results that others did. May try again as it is a great idea for all the summer blueberries.

Linguini with Broccoli and Red Peppers

This was good! I have to agree with others to add something-tomatoes, broth, wine-to make it saucier and add flavor. I added about 1/2 a can of petite diced tomatoes to the veggies and it was perfect. If you like spice, add red pepper flakes. It was a great dinner! Plus quick and easy too-will def make it again!

Best Spanish Rice

Great rice, perfect side dish. I used pace for the salsa and veggie broth to keep it vegetarian. It is light in texture and flavor and really nice! Thanks, I've already made this twice!

Caramel Shortbread Squares

These are soooooooo good!!! I made them over the holidays with fabulous results. Everyone that tried them absolutely raved over them. They looked great too. My only advice is to allow enough time to let the layers cool before adding the next, especially between the shortbread and caramel. Yum!! I can't wait to make them again!

Honey Whole Wheat Bread

Great bread! Perfect density, holds up well for sandwiches, great taste! I will make this one often. I like it as written but do think that the changes other reviewers mention (2 c whole wheat to 1 cup bread flour, 1/4 cup honey, 1 t salt) make it even better. I used my bread machine to mix/knead and baked it in the oven for 27 mins at 350 and it came out a beautiful loaf to look at too! A new favorite, thanks!!

Holiday Brie en Croute

Fabulous!! This was really popular at a holiday party we hosted. I left out the almonds as my husband is allergic. The cranberries and apricot preserves make such a great combination with the cheese. I had to use camembert as the store was out of brie wheels and it was great-I think any soft ripened cheese would be wonderful prepared this way. Beautiful presentation, got tons of compliments on it-people thought it was store bought. A great recipe that I will definitely use again!!

Butter Snow Flakes

Truly excellent cookies! I didn't have orange zest so doubled the cinnamon and they are perfect! Can't wait to try them with the orange! Every oven is different of course, but I burned my first batch-7 mins is perfect in my oven, 12-15 was way too long to bake.

Easy Pizza Sauce III

Wow! This was so great and so easy! I used a blender and added some extra spices and sugar (1/2 T basil, 1/2 t sugar, some italian seasoning) as some other reviewers recommended. Because of this sauce, I made the best pizza ever!! Makes a good amount-froze 1/2 for the next pizza I make! Thanks!!

Alicia's Aloo Gobi

This was really good . . . like Alicia I love a saucy curry and though Aloo Gobi is meant to be a dry curry, I liked this wetter version a lot. I can't put my finger on it but there was something missing from this recipe. It was really good and I will make it again and play with the spices a bit (definitely cut back the garam masala and the cayenne too if you don't want it too hot!). I think I may saute the spices next time with the onions and garlic, maybe that will bring out their flavor more? The heat of the cayenne seems to overpower the other flavors here. I also agree that the full can of coconut milk is a bit much, it probably does only need half unless you like it really wet/saucy. Overall, we really enjoyed this! And it made A LOT of food~have frozen half to see how well it keeps for a future meal! And there's still plenty left for lunch today. So great as this was a very inexpensive meal to make. Served with basmati rice and naan, great dinner! Thanks!!

Cheesy Hash Brown Bake

Fantastic! I have made this so many times now, I often take it to my monthly mom's group and have also made it for family brunches, even as a side dish for a potluck dinner. So quick, easy, and delicious! I like to use 1 can cream of potato and 1 can cheddar cheese soup, seems to be the perfect mix. I always forget the parmesan and never notice-just cheddar works just fine too. I do cut the sour cream a bit, just so it's a little thicker. I love this for morning meetings-you can mix it up at night without thawing the potatoes first then let it sit in the fridge overnight before baking in the morning. Great recipe-both as written and if you want to play around with it. Thanks!!

Cheddar Onion Drop Biscuits

I loved these and i don't even like biscuits that much! They are cheesy, moist and easy. I used powdered buttermilk with success-I rarely if ever buy fresh. The onion flavor was subtle but the perfect amount. Really good-not overpowering on the baking powder side which I really appreciate. I will definitely make them again! Quick, easy, and they were perfect with our pasta! A great side to help stretch a meal. Thank you!!

Pumpkin Cookies V

Fabulous!!! Soooo good. Normally I do not like pumpkin cookies/bread etc because I am not a fan of clove/nutmeg/etc. But these were AMAZING! Just cinnamon is just perfect. And the texture of these cookies is fantastic-cakey and soft. The frosting is such a perfect sweet topping on these, delicious!! The only change I made was to use butter instead of shortening but that's just personal ingredient preference. I cut the recipes in half and they were absolutely inhaled within 24 hrs! Wish I had made the whole recipe. I have already been asked to make them again and I will be making them for 2 different upcoming events. Thank you, this is going in my permanent file!

Cinnamon Bread I

This was pretty good. I have to say it grew on me-when I first tasted it I thought it was a little bland but it kept getting better as I ate my slice. I followed other reviewers advice to mix the topping into the middle and those little pockets of sugar were really nice. My son LOVED this! All in all, it was well received and I ended up liking it too~I think it just wasn't quite as moist and sweet as I expected when I took my first bite. But I will definitely make it again. Thanks!!

Sarah's Rice Pilaf

This is great for a basic rice dish! We loved it, even with changes I had to make-my kids hate onion so I used dried minced onion so they wouldn't notice. Would have been so much better with fresh but I really wanted the onion flavor and no complaints so subbed the dried stuff with success. Also used veggie bouillion to keep it vegetarian. Perfect side dish, we love rice and I loved the orzo in it. Great!! Will definitely make it again. Thanks!

Yellow Squash Casserole

This was only ok for me . . . mine looked nothing like the picture. It was REALLY greasy from the butter. In fact, when I took it out of the oven, there was so much oil simmering in the pan-and I didn't even add the butter on top, and only added about 3 T to the mix. The crackers have plenty of oil too I guess so maybe that was why it was so greasy? Also precooking the squash made mine really soggy and mushy. And even though there were only 2 eggs, it tasted pretty eggy to me and my DH (who normally loves eggs and never says that). Overall, while it tasted ok, it was a lot of calories and fat for something that was just average. I added garlic and a little seasoned salt as some reviewers mentioned it being bland. Other than that, I followed the recipe but it just didn't turn out the way I hoped!

Corn Chowder

Excellent chowder! 4 stars because as written there is far too much liquid. But having read reviews, I cut the water down to 1 1/2 cups and used a veggie stock cube for extra flavor. Only needed a splash of milk instead of 2 cups and there was plenty of liquid. Great flavor, wonderful with crusty bread for a quick dinner! Thanks!!

Broccoli and Cheese Casserole

Good. I definitely think the cream of mushroom soup addition is a good one. I used half velveeta and half shredded cheddar but next time I think I'll use all shredded cheddar. Fresh steamed broccoli worked great. In the future, I may play around with additional veggies too. But it was great as it was too! I too used white rice because I didn't have yellow and I cooked it in veggie broth.

Mexican Pizza I

Great twist on tacos/burritos! Fun to eat. The kids loved them, they ate them with their hands, cut into wedges and dipped in sour cream. The adults ate them with lots of toppings and a knife and fork! I followed the idea to bake the tortillas first in the oven and use two to make a sandwich style pizza. Also, being vegetarian, I didn't do the ground beef but subbed spanish rice instead. Yum!
