Feta and Olive Meatballs

I used only 1 egg and added 2 Tsp of olive oil and 2Tsp of bread crumb. They turned out juicy and right consistency. I used Kalamata olives instead and also added fresh basil because I had it in hand. I didn't follow the recipe exactly, but I think I will stick to my version. Broiled for 12 mins one side and 5 minutes on the other. They weren't undercooked or overlooked. Thank you for the recipe idea. Delicious!

Delicious Pumpkin Bread

This was very good. I made this twice. The first time with the exact recipe, the second time with few minor changes. I at least doubled(maybe tripled) the amount of spices and added less than 1 tsp of ginger powder also. I used 3 cups of fresh(microwaved pumpkin) and used 1/3 cup of water instead of 2/3 cup. Added a variety of dried fruit (dried apple, blueberry, rasin) and walnut and roasted almonds. My coworkers loved it and asked for the recipe. I highly recommend making these minor changes.

Easy Key Lime Pie I

This was my first time to make a key lime pie. It's my boyfriend's favorite dessert, and I decided to make it for his birthday. I put 7 egg yolks, 3/4 cup lime juice and 1 1/2 cans of condensed milk for more filling. I also put 1.5-2.0 ounces of lime jello mix for consistency and color. It turned out beautifully. Everyone loved it. Eggs make this pie a bit custardy, and the jello mix made look naturally green(not the fake food coloring look). I topped it with canned whipped cream and lime zest. Definitely recommended.

Momma's Wine Cake

This cake was so moist. I made it for my friend's birthday, and everyone loved it. I used 1 1/2 tsp of nutmeg, and I thought 1tsp would have been enough. I used two 9-inch round pans instead of a bundt pan. I baked them for 20 minutes and I think 17-18 minutes would have been enough.

Oven Baked Jambalaya

I had a bunch of my guy friends over for a football game. I was worried that these guys might not eat something too "exotic"(for guys in the Midwest anyway), but they all loved it! I would put more meat/seafood in it though.
