Baked Pineapple Casserole

Made this for Easter to accompany ham, and everyone LOVED it! I had several requests for the recipe! I did make modifications after reading various reviews. They are as follows; I used a fresh loaf of crusty french bread from the bakery, cut the sugar amount in half, used 1 tsp. of almond extract, and decorated the top with a few cherries for apperance. I also used the optional cinnamon and nutmeg, and used butter rather than margarine. We will be making this one again for special occasions/holidays....for sure!

Easy BBQ Flank Steak with Chipotle Mayo

Amazing! A new favorite that my husband grilled to perfection! Used a TBSP or two more honey and let it marinade for 48 hrs. Regarding the Chipotle Mayo -- I only measured out the amt. of mayo I thought we would use, then slowly added in the chipotle peppers (which I had put through the food processor), testing often, as I wanted to control the heat. Will be making again VERY soon!

Greek Pasta with Tomatoes and White Beans

Loved it, it's a keeper! We did modify as per various suggestions in reviews below..... -Added 3-4 garlic cloves, a large shallot (b/c I was out of onions) some oregano and added 2 fresh tomatoes to the 2 cans of diced, maybe did not use the full 10 oz. of fresh spinach, otherwise followed the directions. My family of 4 loved it!

Crispy Rosemary Chicken and Fries

It's a keeper! I used boneless thighs and followed recipe. The only addition was half of a large onion and probably was pretty heavy-handed with the fresh oregano and rosemary. Cooked it for an hour and the chicken was very tender with good flavor. Kids and husband enjoyed it! Great family dinner...thanks Sandy!

World's Best Lasagna

Soooo good! Yes, it takes time, but well worth the effort. When taking all of this time to make, why not use the freshest ingredients possible? Use fresh basil and parsley. Use fresh, and best quality, mozzarella and ricotta and tomotoes. The fennel seeds in the sauce are a must. The sauce recipe is wonderful as written EXCEPT for the salt. Start off with none, or only 1 tsp, and work your way up if need be. Simmer the sauce as long as directions state to get the most flavorful sauce. Lastly, the layering directions are not the best (you will have a lot of extra sauce to enjoy with pasta at another meal) you will need to just go with what the directions state and use your instincts. ENJOY- you won't regret the effort!

Cousin Cosmo's Greek Chicken

We just loved it! It was easy and yummy! I used fresh oregano- (3 TBSP...2 mixed into the Feta, and 1 added to sauce for simmering), halved grape tomatoes, and 1 1/2 c. chicken broth as substitutions. Also, to save time, I bought chicken breasts that are sliced thin already. My children and husband loved it, and I will definitely be making this again! Thank you for sharing!!!

Slow Cooker Chicken and Dumplings

I have made this twice now, and it is a family (comfort food) favorite. I do add fresh diced up carrots and celery (abt.a cup and a half of each), as well as fair amount of fresh minced sage and rosemary (abt. a stalk or two of each. I season 6 chicken breasts (salt/pepper & thyme) on both sides before putting in crock pot and use chicken broth instead of water to cover chicken/onion/veggies. I use one can cream of chicken and one can of cream of celery. Lastly, as others have suggested, I don't put the biscuits in (used only one can of buttermilk biscuits, and cut biscuits into 6-8 parts each) until the last hour and half, to two hours, of cook time. One last thing... I do not shred the chicken...I pull it out and cut into chunks, then put it back in right before I add the biscuits. So good and perfect for cold winter nights. Adding the fresh ingredients is so worth the extra effort (just put herbs in a mini cuisinart to chop) and cut carrots and celery the night before. The flavor is sooooo great with these extra touches. If you use 6 pcs. of chicken, this meal can feed 6 adults, 2 kids and still have leftovers!

Slow-Cooker Pepper Steak

I read through many reviews and took others suggestions and did the following with great success....I marinated the beef in beer overnight. Then, seasoned it as recipe states, but did not brown in pan, I just put it into crock pot. I did NOT add extra salt as it was NOT needed due to the soy sauce. I added a clove or two of minced garlic and some sliced mushrooms. I used one red pepper and one green, but did not add until last hour of cooking. Served with rice and had leftovers!! Will make it again!

Chicken, Garlic, and Sundried Tomato Pasta

We will be making this again! Per reviews, I added about a cup of white wine to the sauce. I will be adding more sun dried tomatoes next time, but otherwise followed the directions to a T. Good family meal, this kids loved it.
