Baked Fish and Rice

this was great! I needed to use up some frozen whiting fish (which wasn't so good the last time I used it)and I didn't have any fried onions so I just added a lot of extra parm to the rice, and salt & pepper to the fish. I also used a bag of frozen mixed veggies. yum!

Chicken Fried Venison Steaks

I thought this recipe was great! the breadcrumb/cornmeal mix was yummy and the carmelized onion was tasty and nice for presentation. I served over white rice and doubled the milk for the gravy since I had plenty of bread crumb mixture left. husband said it was interesting and different (than other chicken fried venison he'd had) but definitely good. I would even try frying veggies in this mix. I did think the egg/milk mixture was a little runny and I would have liked to taste more of the pepper sauce so I'd cut back on the milk there next time.

Never Fail Biscuits

these were easy - I used a food processor to mix all the dry and cut the butter in. I baked them until they were done but not brown and then froze them for my husband to pull out before work.

Fluffy Pancakes

I liked finding this fluffy pancake recipe, especially since it doesn't call for buttermilk - which I almost never have around the house. using butter definitely makes them tastier. I also use 1/3 white, 1/3 whole wheat, 1/3 corn meal for a really yummy multigrain pancake. thanks!

Absolute Mexican Cornbread

I used half the butter, half the sugar, and pepper jack cheese... so good! I'd use the whole can of chiles next time, and I think I'll add cayenne as well, even with the pepper jack. I just tried it with whole wheat flour instead of white and it was also fantastic! added some pimentos for color too.

Hot and Spicy Chex® Party Mix

this is a good basic recipe but I thought wasn't near spicy enough. I sprinkled extra red pepper and some more seasoned salt (I used Tony's so it's a little spicy also) and then it was perfect. I also added wasabi peas which were a big hit!

Downeast Maine Pumpkin Bread

very good! instead of canned, I used 3 cups of fresh pumpkin puree (from a leftover uncarved halloween pumpkin) and omitted the water. very moist. I added chopped pecans to half the batch which was great also. this recipe made one large loaf and 24 muffins for me (the muffins only took about 30 minutes to cook). I did also substitute 1/2 c butter + 1/4 c oil + 1/4 cup unsweetened applesauce for the oil. I would even cut back on the butter next time, substituting more applesauce.

Caramelized Brussels Sprouts with Pistachios

this is my new favorite snack! I use balsamic vinegar since that's what I have around and cut the brussels sprouts in half so they get more carmelization. red onions if I have them, otherwise white or yellow taste just as good. and I have never even added the pistachios, they're so good without!

Herbed Lentils and Rice

for such an easy and healthy dish, this was wonderful! my husband didn't even complain about the rice I used like he normally does (I used some red rice we have, which was similar to brown). we are tempted to play around with the spices next time, it could easily be flavored to indian or mexican cuisine.

Cheesy Tuna Mornay

I made the recipe as is and thought it was a good basic start, but it did need some kick, so I added half a block of cream cheese and some Tony's creole seasoning. that did it! I will go back to this recipe to make again. I did saute onions and celery with the butter at the start, but that was just an effort to cram as many veggies in as possible.

Chocolate Chip Coffee Cake

this is the best dessert to take to anyone, for anything. I usually split it into two of the disposable square baking pans. it freezes well also, I pull it out the night before to thaw - and have a breakfast treat ready in the morning! I love that the recipe is fantastic as-is... no need to change this and that.

Sky High Yorkshire Pudding

my husband loves and insists on these every time... he eats 6 in one meal!! the first time I skipped the "smoking oil" part and was scraping them out of the pan. but when I FOLLOWED THE DIRECTIONS :) they came out clean and easy. if you're using gravy, like we always do, these don't need any salt at all. perfect recipe!

Pierogi (Polish Dumplings)

I'm no pierogi connosiuer, but these were good. I made mine too big, so they were too dough-y, but they were still good. makes a lot of them! I froze the leftovers for a quick snack to stir fry with onions and bacon and whatever veggies I have in the fridge.

Morning Glory Muffins I

I used this recipe for my son's first birthday, and all the kiddos loved their healthy "cupcakes!" I added coconut, and some craisins since I didn't have enough raisins, and also used half whole wheat, half white flour. My mother-in-law the baker said they were the best she'd had! I've since made mini-muffins, this recipe made about 60.
