Carrot Rice

Used almonds and jasmine rice because that is what I had. We really enjoyed this, but I need to add that I never do anything with myrice so this was a nice change. Make sure you almost caramelize the onion. Yum!

Great! Made it for a Hanukkah party and was nervous because I have never had it. My Jewish friends said it was excellent! I added 1tsp cinnamon and doubled the topping. Separate the eggs while they are cold, but don't whip the whites until they are room temp. Made a rather fluffy dish! Yum!

Sweet and Savory Slow Cooker Pulled Pork

We really enjoyed this, esp my 4 yr old. My husband wished it had some spice toit, but he added hot sauce while eating. I was in a hurry so I didn't brown the outside and i used boneless picnic.

Scalloped Potatoes and Onions

Nothing spectacular, but very good and I was pleased that it wAs relatively healthy and very easy. Cutting the potatoes, was the hardest part! Thanks for the recipe!

Spiced Pot Roast

Sweet, but my family really liked it. I cooked it for 2hours. Then I put the sauce through my fat separator and used wondra flour to thicken it a bit.

Aunt Norma's Rhubarb Muffins

Maybe my rhubarb wasn't as fresh as it should have been or maybe it's b/c I subbed 1/2c whole wheat for some of the white flour, but I kind of found these bland and boring. My favorite part was the buttery sugar topping (that I sprinkled on during the last 5mins in the oven).

Rhubarb Dream Bars

One of my best rhubarb things yet! I subbed 1/2c golden flax meal for 1/2c of the flour in the crust b/c I like the slightly nutty flavor (and extra fiber). Halved the sugar in the rhubarb/egg mixture, and was a little generous in my rhubarb measurement. REally a keeper. I'm hoping they'll freeze ok. I can't stop eating them. Update-- it's 2 months later and they froze like a dream.. I cut them before freezing and put them between layers of wax paper in a plastic storage container.

Speedy Cinnamon Rolls

My boys (6 and 3) loved these, as did I. The pan on the lower oven rack had more of a toffee/caramel taste and the ones on the upper rack had more like a creamy frosting.. both were delicious.

Creamy Potato Leek Soup II

Very good. Cooked as stated except ended up adding more chicken stock (it was way too thick) and used 2% evap milk vs cream (to try to lighten it up a bit). I'd make it again, but maybe add some celery. Oh, I also used an immersion blender b/c my kids won't eat anything green (had to hide the leeks!).

Downeast Maine Pumpkin Bread

Delicious! I've made this several times following the recipe exactly, but today tried with 1/2cup applesauce and 1/2cup veggie oil and 2 cups white flour, 1 1/2 cups whole wheat. Couldn't tell the difference. Oh, did 375degrees, 30 minutes for 19 muffins (they were big ones-- filled the muffin cups). My 5yr old and 2 yr old love the muffins, as do I.

Colossal Cookies

Really good. I flatten with the bottom of my measuring cup and then put M&M's on top (in smiley face design) before they bake. I skip the choc. chips. My stand mixer can barely handle mixing these.

Cheesy Ham and Hash Brown Casserole

Defrosted the hasbrowns. Added a diced & sauteed onion, a defrosted & squeezed block of spinach, and some freshly ground pepper. Used light sour cream. Delicious. My husband and 22month old loved it. My 5 yr old did not but I expected as much. We ate it for dinner (and have enough for at least one more meal). Thanks!

Italian Sausage, Peppers, and Onions

Really excellent. Once browned I cut the sausage into 2inch long pieces and when it was all finished served the whole thing on buttered & toasted hoagie rolls so we could eat as sandwiches. The cooking juices made the bread delicious.

Mulligatawny Soup I

I put WAY too much curry in (T instead of t) but this still tasted great! I ended up pureeing everything with my immersion blender after it cooked a while and THEN added *cooked* chicken cubes. I used brown rice I had cooked ahead of time. I added a handful of raisins for more sweetness (was worried about how a big granny smith would taste). My 18mo. old loved it. Next time, I may puree in some chopped spinach as well although I'm sure the soup will be a less attractive color.
