Penne Pasta with Spinach and Bacon

I found this recipe kind of boring. I think that I will add some Parmesean cheese to the leftovers and hope that livens in up a little.

Broccoli Chicken Casserole III

This was very tasty! I made a few changes though, but nothing drastic. I didn't have any curry powder, so I left that off. Instead of one clove of garlic, I used two cloves and I also boiled my broccoli with my noodles before hand. It needed to be cooked longer than the recipe stated, but that may be my oven or just how I felt. Also, don't use three bowls to mix this! Just use one. There is no point! I also used light sour cream and healthy request cream of chicken soup and it was still very tasty and cuts down on the fat.

Black Bottom Cupcakes I

For some reason, my cupcakes stuck to my liners. Maybe I should have sprayed those first? I also had alot more filling then I did cake batter, like other have stated. Some have said that their filling was runny, mine was actually pretty thick. Not sure why though. Also, only had to be baked for 20 minutes, not 25.

Lemon Cream Cupcakes

I'm giving this recipe 4 stars because I had to double the amount of frosting to get all the cupcakes frosted and 25 minutes baking time was too long. 20 was perfect but then again, everybody's ovens are different.

Hot Fudge Ice Cream Bar Dessert

I took this dessert to a party and everybody loved it. A few people even asked me for the recipe. I thought it was a bit messy to make, but well worth it. I had to put a tray under it when I was making it and in the freezer so that it caught all the chocolate that oozed over the top of the pyrex. Would for sure make this one again!

Kielbasa and Potato Bake

This recipe was very good. The only changes I made was I didn't put in any additional salt and instead of cubing the potatoes, I sliced them thin. Also, at the very end of cooking, I topped the casserole with a little bit of grated cheddar cheese.

Pineapple Upside-down Cake Martinis

These were very good! I'm not usually a fan of martinis but this was more like a punch. We made these for a party and instead of making individual martinis, we just put all the ingredients in a pitcher and it turned out really good and was very simple and all the girls loved it.

Sausage Casserole

This recipe is pretty good. A little too much onion flavor though. Next time I make it, I will cut that in half. Also, next time to save some time, I will use frozen shredded hash browns. Instead of sage flavored sausage, I just used regular flavored breakfast sausage.

Best Ever Chuck Wagon Chili

This chili was pretty good. I did add extra spices to it though. I tripled the chili powder and and added some cumin. I think if I hadn't done that, it would have been too bland. It was nice and thick though.

Chicken Stuffed Chiles

This recipe was really good. I seemed to have a lot more chicken mixture than I had chiles though, so with the extra, I just kind of piled it on top of the chiles after they were stuff and places in the pan. Also, I forgot about the sour cream, but they were good without it anyway.

There are only two of us in our house but I make the whole batch whenever I make them because they are so good and they freeze very well. They are time consuming but well worth the work. The only change I made was I added 1 teaspoon of garlic powder to my meat mixture while it was cooking.

Easy Slow Cooker French Dip

This recipe is so good and so easy. You could serve this to a crowd in the same amount of time that it would take you to make it for just a few people. I love putting this on to cook before I leave to go somewhere and when I get back, dinner is done! *Edit-I have made a few changes and now I believe that it's even better. Now I add 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 tablespoon of Worcestershire sauce and some salt and pepper to the cooking liquid. Wow! Yum! I could eat the juice as just a soup at that point and be happy.

Refried Beans Without the Refry

This recipe was very easy and very good. I would reccomend cutting down the salt and garlic though. You kind of had to babysit the slow cooker and make sure your water didn't run out, but the end result was really good (that was when I used my bigger slow cooker. This last time I used a smaller one and actually had to remove some water at the end of the cooking time). I would definately make again if I wanted the restuarant taste without going out.

Albondigas Soup I

I don't usually like albondigas because of how much basil is in it, but this one was really good with some changes. I used 1 pound of ground turkey instead of the beef and pork mixture. I also cut down my basil to 1/4 teaspoon of dried basil in my meatballs. My husband really like this as well and that's something since he grew up eating his mom's albondigas and this was way different.

Chicken Andouille Gumbo

This recipe makes way more than the 8 servings that it says it makes. It's a very good gumbo, but I felt like a lot went to waste because of how much it made. Also, I couldn't find file powder, so I just left it out.

Michelle's Blonde Chicken Chili

This recipe always reminds me of Halloween. I don't know if it's the color or because it's when I start making soups and chilis but this recipe is really good. The only changes that I make to it is that I don't use as much chicken as called for and I usually add grated Monterey Jack cheese in it at the end. Very yummy!
