Festive Cracker Spread

Would have been a five star but it seemed like there were just TOO many vegetables in this. It seemed better after sitting in the fridge for a while though. I think I would have had a better first impression had I used stronger green olives. The ones I had were so mild they almost tasted like black ones, so it could just be my ingredient choice that is the problem. My guests LOVED it though, so I will keep this recipe around and continue to tweak it a bit. I added a bit of salt and freshly dried oregano. I also veganized this by using cheddar Daiya, Follow Your Heart cream cheese, and Vegenaise. The creamy base of the dip was wonderfully delicious.

Buttermilk Pancakes II

These are AWESOME!! I put in a 1/2 c. of sugar instead of 3 tbsp. and also added a tsp. of vanilla. These tasted soooo good with maple syrup and butter. Yum. Thanks for the great recipe!

Ambrosia Fruit Salad

I think the nutmeg and the cinnamon are a must. They give it that nice pumpkin pie flavor. I tried it with just a half teaspoon of each, and I ended up adding more.

Chicken Florentine Casserole

Really awesome recipe. I doubled the mushrooms (could probably even quadruple them if you really like mushrooms) and sauteed them in olive oil and fresh garlic. I also squeezed all the water out of the spinach using a sieve and a wooden spoon. I also did not put the full amount of bacon bits in as I was afraid that it would overpower the dish. I brushed the chicken with olive oil and sprinkled it with garlic pepper, parsley flakes, basil, and seasoned salt before it. My boyfriend LOVED this dish and compared it to something you would get at the Olive Garden. I personally think it's way better than anything you could get there, but he loves that place, so it's all good :)
