About this Cook
I'm a Peace Corps Volunteer in Namibia, where I'm teaching computers (Keyboarding Word Processing) to learners (students) in grades 8-10. I arrived in October 2004 and will be here until December 2006! Before I came here, I was the Queen of Microwaving, but since I don't have one here, I knew I either had to teach myself to cook or be forced to eat PBJ for two years! I opted for the cooking route, starting on January 1, 2005. Slowly but surely, I am becoming the next Betty Crocker! My favorite things to cook
Breads (I make a loaf every Sunday and eat two slices for breakfast each day that week, and if I have some left over after Friday, I share it with my fellow PCVs who visit me that weekend!) and desserts

One grandmother's pizza frittas (fried dough) and meatballs; another grandmother's meatloaf, scrambled eggs, and eggsalad; and countless recipes from my mom
My cooking triumphs
Pineapple chicken, caramel chocolate peanut butter fudge, various breads, my grandma's meatloaf, and my mom's stuffed meatballs
My cooking tragedies
Pizza frittas (Grandma's recipe -- the dough didn't rise, but I tried to fry it anyway, and it came out very yeasty and leather-like) and oatmeal cookies (Peace Corps recipe -- I think it was because the molasses was bad -- however, my housemate's dog certainly enjoyed the result!)

Apple Loaf
The loaf turned out well -- it's not overly sweet nor is it overly flavorful, but it's still good. If I were to make it again, I'd probably add another 1/2 cup or so of the shredded apples. Nevertheless, it's one of those good, wholesome breads that just about anyone would like!

Tuna Curry in a Hurry
This came out quite well. I don't like peppers, so I left those out of the curry. In addition, I *didn't* use 1/2 the sour cream as recommended in the reviews, but near the end of cooking the curry, I decided to make some rice, so I think some of the soupy-ness of the curry (caused by using the full 1 cup of sour cream) evaporated while I was waiting for the rice to cook, so it balanced things out. However, if I were to make it again, I *would* use 1/2 cup of sour cream. I've never really been a curry person at all, but this didn't come out too spicy and tasted great, esp. when served over rice!

Oatmeal Whole Wheat Quick Bread
I didn't like how the first loaf came out so small, so I modified a few things and baked it again a few hours later so that I could get the desired result. Consequently, I doubled the recipe, put the batter into a greased loaf pan, and baked it for 1 hour at 350 F. Both loaves were dense (like the recipe said that they'd be) and yummy (esp. with butter/jam/whatever on a slice)!
