This recipe is fantastic! I used all whole wheat flour, added 1/2c of oats, and substituted applesauce for all the oil. Didn't have coconut, don't like walnuts. Used Craisins instead of raisins (didn't have those either). When the time came to bake, I remembered I had tossed my muffin pan and had yet to replace it. All I had was a small Pyrex casserole dish, so I used that. Baked for 40 mins at 350, then cut the "muffins" into slices. So good! This would probably bake well in a loaf pan and make for a great gift bread.
