Pumpkin Chipotle Soup

Awesome! We found sofrito in a jar at our local Target, so I don't know how "authentic" it is, but it was good enough to make this soup delicious. This is probably obvious, but use less chipotle for less heat. My family loved this soup so much, we made it twice in two weeks. Thanks for sharing!

Chewy Sugar Cookies

Perfect except this recipe lacks cream of tartar, which I always think of as the key to great snickerdoodles. I added a teaspoon and these cookies were amazing!

Pad Kee Mow (Drunkard's Noodles)

Easy recipe and very good. Skipped the oyster sauce because I was out and added broccoli and carrots like some others. Also used regular dried basil instead of Thai. I halved the red pepper, deciding we could add more individually if needed and it was list I'll pretty spicy. Easy weekend lunch. Thanks!

Awesome Sausage, Apple and Cranberry Stuffing

I make this every year for Thanksgiving, and it always gets requested for Christmas! It's the most popular dish at the holiday meal. I use Granny Smith apples, but that's the only change I make. Thanks for the great recipe!

Quinoa Tabbouleh

Fantastic! I followed the recipe, but I think next time I'll use less oil and lemon juice--it was pretty wet. I added cumin, as another reviewer suggested, and used sliced grape tomatoes instead of large tomatoes b/c that's what I had on hand. OK, I'm not gonna lie--I ran out of lemon juice (only had about 1/8 c) and used lime for the rest. It tasted like it would be better with all lemon, but in a pinch, lime was good, too! Thanks for the recipe!

Easy Morning Glory Muffins

This recipe is fantastic! I used all whole wheat flour, added 1/2c of oats, and substituted applesauce for all the oil. Didn't have coconut, don't like walnuts. Used Craisins instead of raisins (didn't have those either). When the time came to bake, I remembered I had tossed my muffin pan and had yet to replace it. All I had was a small Pyrex casserole dish, so I used that. Baked for 40 mins at 350, then cut the "muffins" into slices. So good! This would probably bake well in a loaf pan and make for a great gift bread.

Banana Crumb Muffins

These are great! Doubled the recipes and made 24 mini muffins and 8 regular-sized ones. Used half whole wheat flour, and substituted Splenda baking blend for the sugar. Thanks for the recipe!

Used half whole wheat flour, added cranberries and orange zest to one batch, blueberries and lemon zest to another. Sprinkled raw sugar on top before baking. Best scones ever!

Spinach Bars

These are awesome! Next time I will cut down the flour a little and add a little more egg. They're kind of like spinach-cheese bread--I was thinking more along the lines of a quiche when I made them--but they're GREAT!

Grandmother's Buttermilk Cornbread

I had a brainfart while making this (I'll blame it on my infant son waking up from his nap in the middle of me mixing the ingredients) and totally forgot to add the eggs. It still came out AWESOME! It's more dense than cake like without the eggs, which some may prefer. Also, I melted the butter and mixed the ingredients in my cast iron skillet, as others mentioned they did, and baked it in that. Used fat-free buttermilk powder, too. Great corn bread!

Fresh Southern Peach Cobbler

This is the best cobbler I've ever had! The dumplings are buttery and melt in your mouth, and the recipe made the perfect amount to cover 6 large, ripe peaches.

Sweet and Sour Chicken I

This made better sweet and sour chicken than the restaurants where I live. I took another reviewer's advice and seasoned the chicken with garlic powder, salt, and pepper before coating in batter, and it made for very flavorful chicken pieces. Used the batter on shrimp, too, and it was great!

Pumpkin Pancakes

Best pumpkin pancakes ever! I used apple cider vinegar and added extra milk to thin the batter a little (I like thinner pancakes). I always double the recipe and freeze the leftover batter.
