Make-Ahead Mashed Potatoes

Not a good alternative to traditional mashed potatoes. Although the flavor was very good, the consistency was FAR to thick. I also removed these from fridge 30 minutes prior and they were still cold in the middle after 40 minutes. I had to use the hand mixer to mix them and they required an additional 20 minutes. I probably should have added some chicken stock or additional liquid and mixed just before serving. The leftovers did make a great turkey shepards pie a couple days later!

Cranberry Chutney I

Good. Received compliments. I also reduced the vinegar to 2 tbsp and split the sugars by adding half white and half brown. I also added (1) grated orange rind. Still seemed a tad tart to me, but then I'm not really a fan of cranberries.

Savory Turkey Gravy

Was not inmpressed with this gravy despite having made my own turkey stock and added some of the pan drippings. I thought this would really be tasty. The poutry seasoning was much too strong and the gravy would not thicken without adding a lot of corn starch. I'll stick with my old standby next year.

Fluff Dip for Fruit

Tried this for Easter dinner at in-laws. Modified recipe using cream cheese flavor pudding instead of vanilla. I thought it was pretty good, but it didn't fly off the table. Might try again using almond extract- I thought the aftertaste of the Amaretto was a bit much. I do like MUCH better than marshmallow based dips and agree with previous posts that this would make a great frosting for cake or cupcakes. I'm going to experiment with this one.
