Bread and Celery Stuffing

Very tasty! We were out of onions, so we had to use onion powder instead and used cornbread in place of the white bread. It was delicious! The kids weren't too crazy about it, but hey... they're kids. :o)

Chocolate Tres Leches

This came out looking nothing like the picture (my husband joked I should call it "Ugly Cake"), but it was delicious. I do wish it looked a bit prettier since we do eat with our eyes first... but it was really a tasty cake. Great for potlucks or (nearly) last minute needs.

Chickpea Soup I

There was something a little funky about it. I very much liked the sweet potato, corn and garbanzo combination... but the tomatoes and green beans and peas were off. If I make it again, I'll leave those out.

Suspiro a la Limea

WHOA! "Painfully sweet" is about right! left me feeling a bit sick. We goofed the meringue and had to leave it off... maybe that would've cut some of the sweetness, but I'm not thinking so. It would be an excellent dip for fruit or maybe something salty.

Michelle's Famous Washed Cranberry Sauce

This has become our go-to cranberry recipe. We've used it for 6+ years now and love it. I think we use more brown sugar than called for. I would eat this year 'round for snack or side dish. It is great!

Leftover Ham Compote

I used orange juice instead of apple, dried apricots instead of fresh and I doubled the cranberries and ham. We liked it pretty well. Next time I think I'll dice the apples and add less honey.

Jean's Homemade Chicken Noodle Soup

I have made this for several friends when they're sick. It's always a hit. I cut the ginger up smaller than rounds and leave them in. Ginger is beneficial for the immune system.

Grandma's Sweet Slaw

This was really good! We used 1/2 Splenda, 1/2 sugar. It was a little soupy, though. This recipe has a lot of potential, too. I could easily see adding some coconut or raisins or celery or crushed pinapple, etc.

Vanilla Ice Cream III

Pretty good and quick, too. It is a little "hollow" tasting. My ice cream maker can't handle 32 servings, so I put the extra into a gallon jug in my fridge; now I can make ice cream at a moment's notice. We just put about 1 3/4 cup mix into our 1 1/2 qt. machine. Turns out a little less than the 1 1/2 qt capacity.

Bahamian Mahi Mahi

Very good. We don't drink, so we never have rum around. Instead, I diluted molasses with pineapple juice (about 50/50). Also, I forgot to put the butter on the fish. It was still great, and lower fat, too. I bet this sauce mixture would be great on chicken, too.

Tuna Curry in a Hurry

Pretty good and quick, too. We served it over brown rice for a nice, filling lunch. Carrots were a good replacement for the peppers, too. Just cook with the onions. We also tried substituting yogurt for the sour cream-- not that good.
