Salsa Chicken

Not too bad for a no-brainer. Made a few times, first time pretty much to the recipe, second time I made my own salsa and it was even better, third time I used thighs and drumsticks and added a can of black beans to the salsa, great every time.

World's Best Potato Salad

Pretty good, my husband didn't like it, too onion-y for him. I used less sugar and mayonaise, added a pickle and more mustard. Don't forget the celery seeds.

Iced Coffee

Very yummy. I didn't bother with the water and the instant coffee, just used about a cup of cold coffee left over from the morning, used fat free sweetened condensed milk, and no regular milk. Made it with chocolate syrup, caramel and both, great every time.

Sauteed Portobellos and Spinach

Really good, served with steaks and baked potatoes. I ended up using two tbs more butter to keep it moist, used one tbs balsamic vinegar instead of wine and a bit less parmesan. Next time I think I'll experiment with different cheeses or no cheese.

Absolutely Ultimate Potato Soup

Pretty good, I added 1/2 tsp thyme and only used 1/2 tsp tarragon (wasn't sure about licorice flavored soup). Pureed half like directed, not sure if it really needed it because after that it reminded me of mashed potato soup, but overall good flavor, kind of heavy on the bacon and I only used a little over half a pound. So next time I make it, no pureeing, no bacon in soup, only for garnish. Oh also added a shredded carrot, added color and taste, and no cilantro.

Crab Stuffed Flounder

Absolutely delicious. Made a few changes since there were mixed reviews about the mayo topping and the lack of seasonings. Well first I used 2 cans of crabmeat, tripled the mustard, crackers and worchestire, added some garlic powder, minced onion, parsley and chili powder. To the fish I brushed on melted butter mixed with some lemon juice and garlic powder. To the mayo topping I used about 4 TB and added about 2 TB of sherry to smooth it out. Turned out absolutely delicious, although next time to make it more resturant quality I'll skip the mayo mixture on top and instead make a sherry cream sauce from roux, and pour it on just before serving for a more impressive presentation.

Cheese Ravioli with Three Pepper Topping

Very good, exactly the change from traditional sauces that we needed. Used it on three cheese tortelini. Added garlic, italian seasoning, used butter instead since I was out of olive oil. Fantastic!

Best Brownies

Pretty good. Very similar to a brownie recipe I made as a little girl. Only changes I made were to eliminate the honey and instead use milk. Make sure you check the time, I've made these a few times and they were always ready after just 22 minutes.

Super Simple Oven Barbequed Chicken

Very good, just made this tonight. Wanted something easy with items on hand, and this fit the bill. The only changes I made were to reduce the cumin by half and add a about a tablespoon of brown sugar and a 1/2 teaspoon of onion powder. They were done in 45 minutes and oh so juicy.

BBQ Chicken Pizza

Had a really cilantro-y flavor (even though I only used half the recipe called for), ended up throwing it away. My husband said it tasted like soap. I haven't made it again but if I do it would be to eliminate the cilantro all together or maybe sprinkle some on individual slices right before serving.

Black Bean and Couscous Salad

Great, served it with the spicy garlic lime chicken (also from this site). Changes I made were increasing lime to 3 TB, using 2 tsp red wine vinegar, and 1 tsp cumin. I was out of chicken bullion, so I used beef instead, added only one can of black beans, omitted the cilantro, and replaced the red pepper with tomatoes. Perfect.

Spicy Garlic Lime Chicken

Nice change from the ordinary. served it with couscous and black bean salad (also this site)as suggested by another reviewer. only changes I made was doubling the spice mixture(all but the salt) and using chicken tenders. couldn't be any easier and husband declared this one of his new favorites.

Cuban Midnight Sandwich

Delicious. Fixed it Sunday night (Desperate Housewives night) for the girls with some black bean soup and Italian margaritas. Everyone asked for the recipe. The mixture of Italian dressing with mayonaise is genuis! Fixed it as written, except added some sliced tomatoes and red onions with the pickles. Burnt my first one, but after turning the heat down to little under medium, the rest came out perfect!

Blackjack Brisket

Very good. I've made it twice, both times using a smaller cut brisket, so I cut everything in half,except the garlic,and only used a quarter cup molasses(my husband's not a sweet person!). The first time I made it, I used the beer and poured the sauce over the meat, but at the end of cooking, the sauce was all watery and bland. I don't know if you are supposed to use a rack in the roasting pan, maybe that would have been different, oh well. So the second time I measured out a quarter cup beer and put it in the sauce mixture and poured the rest of the beer over the meat along with some extra liquid smoke, and put it in the oven without the sauce over it, after about 3 hours I took it out and dumped out the majority of the juice and then covered it with the sauce, put it back in for a couple hours, took it out and sliced it up, put it back in for an hour, and OMG was it good.

Ham and Asparagus Fettuccine

Very good, different way to use leftover ham. I added sauted mushrooms and onions in butter and extra garlic, gave it some more flavor. My husband loved it, so I'll make it again.

Bakery Shop Icing

very good. I had no problem with the it being gritty, but it did have the greasy-stay-in-your-mouth feel. i liked that it wasn't overly sweet and was extremly creamy. I used it on cupcakes, not sure how it would hold up on a cake. Will definitely make again, decreasing the shortening by half and instead adding additional butter. Thought about adding whipping cream but it's way creamy enough.
