Sauteed Portobellos and Spinach

We loved this recipe. It was a hit with everyone. We made a few changes, I used olive oil instead of butter, fresh spinach, I used 3 cloves of garlic and instead of the parmesian I used feta cheese.

Cajun Pecan Catfish

I really liked this recipe and the family loved it as well. I used a little extra parmesan cheese because we love cheese. The flavors were great and I will definitely make this again.

Cornish Game Hens with Olive Rice Stuffing

I was not crazy about this recipe. I followed to the tee but there seemed to be somthing missing. I will try it again because maybe it was something I did. I have tried similar recipes and loved them.

Herbed Eggplant Slices

I would make this again but I only had dried herbs so I did add olive oil to it to spead it on. Next time I think I will try grilling the eggplant instead of putting it in the broiler.

Balsamic-Glazed Salmon Fillets

I made this and my family loved it. I did let the marinade sit on the salmon for about 20 minutes and I also grilled the salmon instead of broiling it. I will definitely make this again.

Spanish Pork with White Wine

I loved the flavor and I had the butcher tenderize the pork so they were very tender the only problem was that they seemed a little dry. I donlt know whether I over cooked them. I will definitely make this again but I would like to figure out what I did wrong.

Bourbon Whiskey BBQ Sauce

I don't think I will ever buy store bought bbq sauce again. The only advice I would give is to add the liquid smoke a teaspoon at a time. Depending what meat you are serving this on you may not want it that smokey. I will make this every time!

Tilapia with Tomatoes, Black Olives and Corn

I made this last night and the flavors were excellent. It was our opinion that you could throw a few more veggies in there if you wanted to add a little more interest and color like peppers or zucini. I will definitely make this again.

Simple Ranchy Breaded Fish Fillets

The store was out of Talapia and cat fish so I used red snapper. You definitely have to use a non stick pan or it gets a little messy. We enjoyed the flavor but my son didn't care for it.

This was great! I served with steak and the flavor is incredible. Huge hit for the entire family. I would clearly do this again. I lightened up on the garlic and put a little more ginger in.

Avocado, Tomato and Mango Salsa

This was a great recipe. I substituted green peppers for jalapenos and I omitted the tomato (family hates) and it was still great. I would back off on the garlic though may be my cloves were really big but I would use two instead next time. The flavors are even better the next day.

Green Bean and Feta Salad

I loved the flavors and would make it again but you do need to cut the dressing in half and it is a good idea to drain excess the next day if you have any left over. The next day the flavors are even better.

The Ultimate Brownie

I loved this recipe and yes it is best with 6 eggs and backed in larger pan. I also noted that with a gas stove you may not need to bake as long. I only baked for 40 minutes and they were done.
