These muffins are so delicious you almost forget they are healthy! The first time, we did the recipe EXACTLY & they turned out beautifully. The 2nd time, my husband did 50% wheat flour/ 50% all purpose and substituted applesauce for the apple butter to make it even healthier. They didn't turn out well. :( I think it was the applesauce, not the difference in wheat flour that did it. That was just our experience though. Others seem to have done the applesauce substitute just fine! I will say, it definitely takes more than the 15 minutes prep time advertised for these. It's more like 30 minutes prep time.
