Ham and Swiss Casserole

Loved it. Used whole wheat egg noodles and cheddar instead of swiss. It was very flavorful. Watch the time... 30 mins was too long, I guess my 3qt casserole dish is rather shallow.

Chili I

I made this for my bunco group and everyone loved it. (the theme was beer/Oktoberfest) To be honest, the heat factor was almost outside my comfort zone, but I'm a big wimp about spicy foods. Still, I thought the flavor was great and the recipe was relatively easy to make. I left out the coriander (because I didn't have it) and used less brown sugar.

Crab Quiche

This was so good and so easy, I can't wait to make it again! I used real crab (packaged... chicken of the sea). Also, I couldn't find a deep dish pie crust. It filled two regular shallow pie crusts nicely.

Teena's Spicy Pesto Chicken and Pasta

This was fantastic. I added chopped roasted red peppers to add color (and because I had some around) and a little chopped onion. Used chili oil instead of paste, and toned it down for the kids. This is easy and a keeper.

Chuck's Favorite Mac and Cheese

Excellent dish, and very easy. I suspect I will be serving this weekly. Great as is, but also very tweakable. Add ham for a more robust meal. Use light sour cream and lowfat cottage cheese to lower calories. Use Italian style breadcrumbs for a different flavor... etc, etc.

Beefy Baked Ravioli

Four out of four thumbs way up from my family, which is very rare! Everyone had seconds or thirds. I didn't change a thing, except to add a little salt to the sauce after tasting. It was very easy to make. I'm putting this into my regular rotation for sure. Thank you!

Alysia's Basic Meat Lasagna

I thought this was great, and more importantly my guests and hard-to-please husband raved over it. One thing that was confusing is that oregano is listed in the ingredients twice, but used in three places (meat, sauce and cheese). I wound up guessing, but it didn't hurt anything.

Bob's Mexican Stuffed Chicken

This was very good! I didn't really expect anything special from reading it, but was pleasantly surprised at how the flavors came together. What I really liked about it is that it was easy to modify each stuffed chicken for the individual. I set aside some breading without the chili for my young daughter, and left the mushrooms off my own. We each had our own made-to-order stuffed chicken with little extra effort.

Salsa Chicken Burrito Filling

I threw all the ingredients in the crock pot (no changes), and added about 1/2 a cup of water. Let it cook all day, then shredded. It was delicious!

Alphabet Soup

The only change I made was to reduce the water by 2 cups. It made for a thick, hearty flavorful soup that everyone in my family enjoyed! My younger daughter and I kept the "secret" ingredient (spicy V8) a secret... or my older daughter would never try something with a "hot and spicy" ingredient. She was fooled and loved it. It made a great dinner, next day lunches for the kids, and plenty to freeze for next time.

Chicken Florentine Casserole

The whole family enjoyed this dish! I skipped the mushrooms (and substituted cream of chicken soup for cream of mushroom), skipped the first step, and used fresh spinach instead of canned. It was yummy!
