Fettuccine Alfredo with Ham

Reviewed: Apr. 4, 2005
Used a little less pasta (because we like things saucy :) and added some pressed garlic to the butter/ham. It was excellent.

Monterey Spaghetti

Reviewed: Apr. 4, 2005
Unfortunately, I didn't read the reviews that mentioned it overcooking until I was at work and it was at home overcooking. Too bad, the part that was unburned seemed okay.

Alysia's Basic Meat Lasagna

Reviewed: Apr. 9, 2005
I thought this was great, and more importantly my guests and hard-to-please husband raved over it. One thing that was confusing is that oregano is listed in the ingredients twice, but used in three places (meat, sauce and cheese). I wound up guessing, but it didn't hurt anything.

Talerine

Reviewed: May 20, 2005
I followed the recipe exactly and it came out very good and tasty. Even my picky husband who snubs casseroles liked it. Easy to make.

Shrimp with Lobster Sauce

Reviewed: Jul. 6, 2005
This was very good, and quick to make. A bit on the salty side, but we like salty.

Easy Honey Mustard Mozzarella Chicken

Reviewed: Jul. 26, 2005
The flavor is not bad but the sauce is runny and there's too much of it. Maybe twice as much as it needs. It just didn't look very appetizing. I put the bacon on in the beginning because of previous comments, and I also used mostly dijon mustard.

Classic Bran Muffins

Reviewed: Jul. 28, 2005
Followed the recipe as published. Good flavor (not too sweet) but I've had moister bran muffins. I will make them again but I still might search for one I like better (or a way to tweak this one).

Teena's Spicy Pesto Chicken and Pasta

Reviewed: Jul. 28, 2005
This was fantastic. I added chopped roasted red peppers to add color (and because I had some around) and a little chopped onion. Used chili oil instead of paste, and toned it down for the kids. This is easy and a keeper.

Bran Muffins a la Brian

Reviewed: Aug. 12, 2005
These are PERFECT. Exactly what I was looking for. Very moist and just the right amount of sweetness and molasses flavor. I'm going to make them every week.

Cube Steak Parmesan

Reviewed: Aug. 16, 2005
Everyone liked this recipe. The breading is very yummy and I think I'll follow the other reviewer's lead and use it for other dishes. The sauce is simple but good. I came close to giving this five stars but it barely missed that TDF (to die for) quality that I reserve my best rating for.

Bob's Mexican Stuffed Chicken

Reviewed: Aug. 23, 2005
This was very good! I didn't really expect anything special from reading it, but was pleasantly surprised at how the flavors came together. What I really liked about it is that it was easy to modify each stuffed chicken for the individual. I set aside some breading without the chili for my young daughter, and left the mushrooms off my own. We each had our own made-to-order stuffed chicken with little extra effort.

Strawberry Spinach Salad I

Reviewed: Sep. 5, 2005
Very delicious and easy to make. It makes a very generous four servings, if you are serving it as a side salad. I thought there was too much dressing, so I just didn't use it all.

This was a big hit with everyone. I did add the feta cheese that was suggested, and it was a perfect addition.

Crab Quiche

Reviewed: Sep. 12, 2005
This was so good and so easy, I can't wait to make it again! I used real crab (packaged... chicken of the sea). Also, I couldn't find a deep dish pie crust. It filled two regular shallow pie crusts nicely.

Chili I

Reviewed: Sep. 27, 2005
I made this for my bunco group and everyone loved it. (the theme was beer/Oktoberfest) To be honest, the heat factor was almost outside my comfort zone, but I'm a big wimp about spicy foods. Still, I thought the flavor was great and the recipe was relatively easy to make. I left out the coriander (because I didn't have it) and used less brown sugar.

Fettucine with Heavenly Salmon Sauce

Reviewed: Oct. 4, 2005
I loved this recipe, and my three year old liked it as well. The only reason it didn't get five stars is because my husband didn't care for it. I used lemon pepper instead of the lemon and pepper. I might try it again without any lemon at all, as my husband complained it was too tangy. Very easy to make, once you've chopped all the veggies and meat.

Ham and Swiss Casserole

Reviewed: Dec. 21, 2005
Loved it. Used whole wheat egg noodles and cheddar instead of swiss. It was very flavorful. Watch the time... 30 mins was too long, I guess my 3qt casserole dish is rather shallow.

Quick Chili Burritos

Reviewed: Feb. 17, 2006
Super easy. We liked the flavor, but baking them made the tortilla crispier than I like. I think next time I will try heating up the ingredients and stuffing a warm tortilla instead.
