Chicken Enchiladas

The enchiladas tasted pretty good, but the structure of the recipe made it difficult to follow. Only one step for all that assembly? Spread the beans on each tortilla first and then combine ingredients to make the chicken filling? No nutritional info. I used corn tortillas and added green chiles to the filling.

I made this with mahi mahi (no changes to the sauce recipe). I love that it was so simple, and everyone in the family thought it was delicious. It's a keeper.

Chicken Florentine Casserole

The whole family enjoyed this dish! I skipped the mushrooms (and substituted cream of chicken soup for cream of mushroom), skipped the first step, and used fresh spinach instead of canned. It was yummy!

Alphabet Soup

The only change I made was to reduce the water by 2 cups. It made for a thick, hearty flavorful soup that everyone in my family enjoyed! My younger daughter and I kept the "secret" ingredient (spicy V8) a secret... or my older daughter would never try something with a "hot and spicy" ingredient. She was fooled and loved it. It made a great dinner, next day lunches for the kids, and plenty to freeze for next time.

Salsa Chicken Burrito Filling

I threw all the ingredients in the crock pot (no changes), and added about 1/2 a cup of water. Let it cook all day, then shredded. It was delicious!

Chuck's Favorite Mac and Cheese

Excellent dish, and very easy. I suspect I will be serving this weekly. Great as is, but also very tweakable. Add ham for a more robust meal. Use light sour cream and lowfat cottage cheese to lower calories. Use Italian style breadcrumbs for a different flavor... etc, etc.

Beefy Baked Ravioli

Four out of four thumbs way up from my family, which is very rare! Everyone had seconds or thirds. I didn't change a thing, except to add a little salt to the sauce after tasting. It was very easy to make. I'm putting this into my regular rotation for sure. Thank you!

Cottage Cheese Chicken Enchiladas

I actually would give this four stars, I enjoyed it. But I was the only one in my family who did. I followed the recipe, and decided that next time I might leave off the enchilada sauce (or use much less) because there is already so much flavor in the recipe. But I probably won't make it again since I'm the only one who liked it. :-(

Kalua Pig in a Slow Cooker

Very yummy and reminiscent of our Hawaiian Luaus. I served it with both rice and tortillas (and burrito fixins) so my guests had the option. Burritos were a big hit, but everyone liked the meat by itself as well. I did buy the special ingredients and followed the recipe exactly (except adjustments for a smaller roast).

Wow, there is WAY too much salt in this recipe... and I am a salt fiend. I had to add a second can of beans just to make it edible. Still didn't care for the combination of spices. Still, it's a nice idea and I might make it again with my own spice combination.

Super easy. We liked the flavor, but baking them made the tortilla crispier than I like. I think next time I will try heating up the ingredients and stuffing a warm tortilla instead.

Ham and Swiss Casserole

Loved it. Used whole wheat egg noodles and cheddar instead of swiss. It was very flavorful. Watch the time... 30 mins was too long, I guess my 3qt casserole dish is rather shallow.
