Downeast Maine Pumpkin Bread

I made this GLUTEN FREE! . I adjusted this to make 1 full size loaf. So this is what I did: I used Bobs Red Mill AP Flour, 1/3 C Coconut oil in place of veg oil, 2 eggs, I used the entire 15 oz can of Libby's Pumpkin, I used the called for amount of water..less 1 TBL which I replaced with vanilla ext. I substituted 1 C Swerve in place of sugar. I also used 1 teaspoon of Bobs Red Mill baking soda, 1 teaspoon of cinnamon & nutmeg and 1/2 teaspoon of Kosher salt. I didn't have ground cloves or ginger so I had to leave them out. I added 1/2 C of Enjoy Life Mega Chunk semi sweet choc chips & 1/4 C of chopped walnuts. I baked it for 60 minutes. I left it in the loaf pan on a wire rack until completely cool. IT WAS AWESOME!!! This is a keeper for sure. I bake once a week. Always a GF type of bread. Next week I'm going to make this again and I think I'm going to leave out the Mega Chunks and add the ground cloves and ginger. I'm looking forward to it. My husband absolutely loved this too. Fabulous Zucchini Grinders

I've made this twice so far. Great recipe. We had it over gluten free pasta in place of the bread. This one is a keeper. Thanks for sharing such a great recipe.

Gluten Free Banana Bread

I used coconut oil in place of butter and sugar in the raw in place of the T sugar I also used 2 tsp of blue agave in place of maple syrup. I added organic chocolate chips and walnuts. I had to cook this for one hour. I think this was great. My husband loved it! Will be making this for now on. Thank you Christina for sharing a fantastic recipe.

Slow Cooker Lemon Garlic Chicken II

Made this for dinner tonight. It was pretty good. I had to add a bit of corn starch at the end because it was a bit watery. Good flavor though. The chicken was very tender. Didn't need a knife. I served it over noodles. I would make this again.

Angel Chicken Pasta

This was FANTASTIC! I added 2 cloves of chopped garlic into the butter and I also added a little extra white wine. I also added 1/4 C heavy cream. My husband loved this. I asked him to rate it and he said definitely a 5 star! Thank you Marian for such a great recipe!

Chicken Breasts in Caper Cream Sauce

I think tis was a great dish. I, like others added 1/4 c white wine to deglaze the pan as well as adding 2 cloves of chopped garlic. I doubled the sauce too. I served this with brown rice and carrots. My husband liked this very much. This is a keeper. Next time I'm going to try fat free half and half and try this over pasta. Good job Mommyto2boys. Thank you for sharing this amazing recipe!

Slow Cooker Chicken and Dumplings

I liked this recipe. My husband did too. I tweaked this a bit. I added a teaspoon of dried dill, 1/2 cup white wine and 1/2 can sweet peas. Once I added the biscuits I cooked this for 2 hours. I started this at noon and we ate at 6pm. I added the biscuits at 4pm. Very good recipe. Will make this again.

This was pretty good. The only thing I did different was add mushrooms to it. It's very rich. A little bit is filling. I would make this again and maybe try baby peas instead of mushrooms. Good job Judi Ann

Way too hot so far as the amount of different pepper used. We like spicy food but this ones taste is off balanced with the amount of pepper. Won't be making this again. I followed the recipe exact.

Slow Cooker Pulled Pork

Made this Saturday. I used the pork loin because we prefer a lean cut of meat. I put s&p as well as a little garlic powder on the pork before adding to the crock pot. I used A&W root beer. Cooked it the maximum amount of hours. I used Sweet Baby Rays spicy and sweet as well as a few shakes of hickory liquid smoke. I had large rolls, buttered them and grilled them until golden brown. This came out great. My husband enjoyed it very much. I tried a few shakes of hot sauce on mine it it was good. Had enough left over for 2 sandwiches. The next day I took a skillet and sprayed it and added the pork with a little more BBQ sauce. Tasted just as good as it did the first time. I will make this again but I'm also going to try a less sweet recipe as well. Good job Livie's Mammy!

Slow Cooker Beef Stew I

Very good stew. My only problem was while set on high due to the flour the meat seemed to stick a bit to the pot. Would I make it again? Sure would. Next time on low. Thanks for a great recipe!
