Mom's Zucchini Bread

This recipe was the sweetest zucchini bread I've ever had. It did freeze very well and didn't fall apart in the toaster. It took a LONG time to bake though. I'd say it took between 70 and 85 minutes.

Amusement Park Cornbread

Blackened Tuna

It was kind of gritty, that's my only complaint. Tastes kinda like vanilla....but not really lol. I might make it again, but probably not for awhile.

Attitude Chicken

So there were some problems. Like how many pots this meal took to make. I used 1 for the broccoli in the microwave (i only had raw broccoli), 1 for the chicken, 1 for the sauce, and 1 for the egg noodles. I also made the "Carrot Recipe" that night, so that was 2 more pans. I had to do some time management to cook everything. I also didn't remember to get lemon so I used lime. It made it kick! It was good though. I would add a bit more milk for the sauce then it says.

Baked Tilapia in Garlic and Olive Oil

It was really good. Even my brother ate one, which is loco. I marinated it overnight like the recipe said, but I cut the onions into rings so I could take them off after the fish baked. I loved the cayenne.

Brown Sugar Meatloaf

My mom's only criticism was that I didn't cut the onions small enough. I didn't like having the ketchup on the bottom. When I fix it again I will put the ketchup on top 10 minutes before it's done so it'll get a little color. The brown sugar taste is awesome.

I LOVED IT. My only issue was that it fell apart. That doesn't really matter to me, because I chunk it up and eat in a bowl like cereal. YUM.

Carrot Recipe

I thought this was great! It helps to have a mixer with a grating blade to get the carrots all cut. I kept the stovetop on high to medium for the whole time and it turned out great, plus the milk evaporated faster. I didn't have cashews on hand, but I chopped up walnuts and toasted them. I also added cinnamon instead of cardamum. It was kind of like hot carrot cake in a bowl.

Calamari

I LOVE CALAMARI! I didn't realize how hard it is to cut the squid into rings. I put a paper towel under the squid and rinsed off the jelly stuff. It helped to cut it a bit.

Chicken Florentine Casserole

When I made it it ended up tasting alot like bacon. I don't know if that's the goal. When I make it again I think that I won't make it with spinach. My family didn't even eat the bottom layer.
