Oven Baked Jambalaya

This is the best jambalaya recepie I have ever found.! I like it a bit more spicy so I add hot sauce to it. Also, instead of adding frozen cooked shrimp I added raw cooks in the oven and takes in all the scrumptious flavours while it bakes! Add some sharp, grated cheddar to it when you're done and it's fabulous! Yum!!!!

Roasted Vegetables

I made this recepie last year and was upset that I had lost the print-out for this recepie; because, it was so yummy!! Fortunately, I found it back and will be making it numerous times throughout the fall and winter months.

Chocolate Walnut Fudge

I like a sweeter, richer fudge so I normally use milk chocolate chips instead of semi-sweet. I found that if you use them in this recepie, then omit the vanilla as it changes the taste completely and leaves a bad aftertaste.

I have to say that I felt a little guilty adding this fudge to my "Family and Friends Christmas Treat Boxes." I am the type of person that loves complicated and somewhat finicky recipes; because, I like the challenge! So that's where I feel guilty about this fudge...a few ingredients, mix it all up, put it in the microwave and PRESTO! It's that simple and it tastes great. Of course, it's not the true taste and texture of traditional old-fashioned fudge; but, it is a fantastic, creamy-textured fudge that I will make and serve time and time again. Plus, it frees-up my time in the kitchen for those finicky cookie recipes.

Fluffy Boiled Icing

After making this recipie the icing hardened right away and became to crusty and stiff to use. I do have a feeling that the sugar may have boiled a little too long. It tastes good, though; but, I can't spread it on a cake.
