Key West Penne

Didn't follow exactly,but the base premise of it is great! I sauteed 2 cloves of garlic in olive oil, added juileened sun dried tomato's, added 1 pound of scallops and 1/2lb. shrimp, 1 large handful of baby spinach. Sauteed, deglazed pan w/ 1/4 to 1/2 c. of dry sherry. Added 1/2 and 1/2 and about 1/4 c. of parmesean cheese. Served over pasta. YUMMY!!!!!

Marietta's White Chocolate Macadamia Biscotti

I get rave reviews with this cookie! Just whipped up two batches for my Christmas cookie plates! This is a sticky dough to shape. I increased the flour by 1/4c. but still was sticky. I will deal with the stickiness b/c I don't want a dry cookie. I also prefer to bake these longer than 8 minutes. I eye them till slightly toasted, approx. 12 mins., take out of oven, flip and bake another 12. I like a crunchy biscotti and so do my cookie fans. Thanks for the recipe, its a hit!

Smothered Pork Chops

This dish is a good base recipe. I altered it by sauteing onions and garlic in olive oil for a few minutes added 1c. of fresh mushrooms. Threw the pork chops (seasoned w/ pepper and salt) in the pan and browned both sides, deglazed pan w/ 1/4c. of sherry, then added, flour, broth and gravy browning stuff. Also added a few splashes of worcestershire. Cooked on low about an hour or so.

Banana Crunch Cake

altered the recipe a bit. Used 1 stick butter instead of shortening and reduced oats to 1/2c. for topping. The cake was not quite banannary enough for me. I will increase bananna's to 1 1/2 c. next time.
